Did you hear about the guy that lives on nothing? No seriously, he lives on zero dollars a day. Meet Daniel Suelo, who lives in a cave outside Moab, Utah. Suelo has no mortgage, no car payment, no debt of any kind. He also has no home, no car, no television, and absolutely no “creature comforts.” But he does have a lot of creatures, as in the mice and bugs that scurry about the cave floor he’s called home for the last three years.

To us, Suelo probably sounds a little extreme. Actually, he probably sounds very extreme. After all, I suspect most of you reading this are doing so under the protection of some sort of man-made shelter, and with some amount of money on your person, and probably a few needs for money, too. And who doesn’t need money unless they have completely unplugged from the grid? Still, it’s an amusing story about a guy who rejects all forms of consumerism as we know it.

Cats indeed make it be known that they are in charge - but I didn’t realize they would at such a young age! I have a friend who also calls their hissing ‘using bad words’. It’s got to be exactly what they are thinking, cussing us out. LOL!<<<

Yes, they are in charge, from birth and some with Siamese blood line, can out cuss all others.

I feel such a fool, when I grabbed them outdoors, I was stretched to the limit and kinda tossed them in the sand box that is always in the bathroom, ‘just in case’ it is needed.

Both were out to kill me and all I wanted was oxygen and to set down.

I noticed that one cried when I touched it and meant to ask the Humane Society Lady to take a look, but she did not have time to come in.

I knew that the tiny ugly one, kept coming to me and cussing, when he wanted a new supply of canned food.

It even lets me pick it up and gently love it.

But it always cried out, then at last, I got a chance to really look at it, expecting to find a twisted leg or?

I found a front leg, that has been ? cut off at the elbow, it is still a sore, and he cries out.

I need to peroxide it and that will upset him, but it should be done.

It is not bleeding, and part of the scab is missing.

Once again, real life wins out, the healthy one that is already showing growth and rarely gets in my sight, allows the legless one to come and take me on and order the next meal.

I do not know what happened to the leg, it is still painful to him, and of course in the future, I will be far more careful, than I have been.

God’s ways, the one who suffers, will be the best cat, for he knows all and has survived this far.

I while back I bought a box of something called Veg-It. Have you ever heard of it? If so, is it like your vegetable powder? Very little comes up when you googlize the term.

Awww, poor little kitty. I wonder if the dogs couldn’ve gotten to him. Although it would be a miracle that he would’ve survived that.

I wish I could come and adopt him. A 3 legged cat may not make it outside. Poor little baby.

I am not familiar with it at all. I did find Vegit seasoning which contained:

Ingredients:
To Top Special yeast grown on blackstrap molasses, kelp, hydrolyzed vegetable protein (from soybeans), toasted onion, dill seed, ripe white pepper, celery, parsley flakes, papain enzyme, mushroom powder, orange & lemon peel, plus a delightful herbal bouquet of the best oregano, sweet basil, marjoram, rosemary, and thyme

Mine is Zucchini, Yellow squash, cucumbers, broccoli, parsley, peppers, onion & garlic (so far) - all that I have dehydrated from the garden. Plus mushrooms (from the store). I will keep adding - have done some green and wax beans that I will probably add, and by tomorrow I will have enough tomatoes to do a 10 tray load - thought I might add some of that too.

Mine is not a very scientifically calculated mixture - if I had it and it sounded good, in it went, like most things I do, it is by the seat of my pants... LOL Oh, down to last loaf of the veggie powder bread - that has been a hit, and used some this morning in omelets. All were good.

On the tomatoes, I saw somewhere about making tomato paste from the powder - I may try that, however I do like the mellowness of simmered tomatoes so would probably have to use fruit roll-up trays to capture that (but even with 3 dehydrators, I only have one fruit roll-up insert - guess I will have to make some... Get my paint stripper heat gun and put the rim on the outside and a lip on the center. I have seen counter top cutting sheets at the dollar store that might work (if they are wide enough) and 3 for a dollar is certainly doable, even if I have to make them a bit smaller to fit the size of the sheet. It is a nice stick resistant, cut resistant food grade, heavy duty plastic.

I just went out and measured one - It will work - they are about 3/4 inch too narrow on the width and about 3 inches over on length. I can work with that! I will try to make them uniformly circular with 3/4 inch clearance all the way around so the air flows evenly. Now just need to make a jig to form it as I heat it. With that I am told you can make great dehydrated spaghetti sauce, chili and soups that have already been spiced and cooked, then dehydrated - sounds good. Reconstitute, heat and eat.

I tried some of that first batch of dried venison tonight for venison chow mein. Turned out quite well! No leftovers, so it must have been good or everyone was just more hungry than usual - sometimes hard to distinguish between the two.

Worked up the area for my late crops today- more string beans, spinach, kale, turnips, cabbage all due to go in tomorrow. Checked on my acorn squash and black beans in the back area (between the hybrid poplar rows) I am going to be overloaded with them both - 300’ row of acorn squash and 600’ rows of black beans.... (did you know that black beans are higher protein than any bean except soybeans (and don’t have the estrogen synthetic that soybeans do either.

One of my favorite dishes from when we lived in Cuba was Black Beans and Rice. They put a bowl of thick soup black beans, topped it with rice, sprinkled crisp cooked bacon pieces on, ring slices of crisp fresh onion, grated cheese, sprinkle with cider vinegar, a couple of split hard boiled eggs on top - Sometimes a dalb of sour cream on top. Yum what a great meal that is...

Few people realize it, but the cubans eat more rice per capita than even the chinese. They will have rice with a couple of fried eggs on top for breakfast, rice with picadillo (ground beef) and yucca for lunch and chicken and (saffroned) rice for dinner. Needless to say, in four years I learned to love all of them.

My father used to hate Christmas and New Year there, because they ate so much that there were always a bunch of heart attacks and funerals to go to from the food binging (Ok, combined with the Baccardi Rum) So all his employees seemed to have someone die then, and el Jefe had to go too.

Sorry for rambling on - just guess I am still wound up from writing the State Chair of the Republican Committee, telling him where I think they are off track. Seems they feel confident if an anti-conservative wins if he will caucus with the R’s - even though he votes D over and over (Like Mike Castle)

Speaking of which - H.R.2749 the overkill food safety enhancement bill that was killed by recorded floor vote yesterday - Well, Its baaaaaaccckkkkkk.Today they tried to vote to recommit with instructions - failed then they tried to reconsider, and that passed. We are still not out of the woods yet. I was hoping they would recommit without instructions which would have basically killed it.

So, we will have to live to fight another day! Of course my RHINO lone congressman (along with now 52 other R’s voted for it. FDA is just clammering for all that unfettered power - no oversight - no judicial proceedings - no warrants required, and none of those pesky small producers to worry about - either the $1,000 annual fee will discourage them, or the record keeping - all ingredients, farming practices, sales by customer name, etc.
Backed up by $100,000 fines or 10 years in jail for ANY infractions. No trials - at the disgression of the Administrator. Then they add a real ROFLOL clause - If the FDA fails to spend all of the money collected from fees, they will be refunded - LOL have you EVER seen a bureaucrat who didn’t spend it ALL and ask for more?

Gotta quit... stacking my soap boxes too high...

We had a kitten thrown out along our road a few years ago - one rear leg totally mangled - took it to the vet and he tried to get it to mend, but to no avail.

So, for several years now we have had a great 3 legged cat - loves to go outside (but we seldom let her) She would probably make it with the exception of the foxes.

Whenever she gets out, we get our two rat terriers and they track her down, he puts a paw on the cats back to hold her down and the other one comes barking for us to catch the cat. Amazing how they learned that after only a couple of times seeing us go out and have to catch the cat. Smart dogs. LOL they are smart ones for sure... He will sit and say ‘Yum Yum’ in begging for table scraps, and if he has been away with us for a while, and he is ready to come home, he throws his head back and says ‘ Home, home, home’ and tapping your first finger on your thumb will evoke a huge toothy smile from him, curling his full lips and showing all his teeth.

HR 2749 Passes With Some Reassuring Language

Well, friends, HR 2749 has passed. Of course, we knew it would. But thankfully, a reasoned debate happened before hand, some wording was altered, and many reassurances were given.

I’m still skeptical about the actual implementation of this bill, but that’s because I’m always skeptical about the choices Big Government makes that consistently support Big Industry, and in this case Big Ag.

Thanks to Jill at the La Vida Locavore, we have a rough transcript of the section of the debate centered around how this bill will affect small-scale direct-to-consumer producers and certified organic producers.

A few highlights:

Representative Farr shares his concerns –

I have deep concerns, however, about the fee structure in the measure, which would charge a farm family making jams or syrup or cheese the same fee as a processing plant owned by a multinational corporation employing hundreds or thousands or workers. This strikes me as not only unfair but contrary to federal farm policy that has encouraged small and mid-sized family farms to get into small scale value-added enterprises to survive economically. I am seeking an assurance from the gentleman that a more progressive fee structure will be found that does not inhibit our farm families from taking advantage of new markets.

As a member of the Organic Caucus, I also have concerns about the interplay between this bill and the National Organic Program. Is it the Chairman’s understanding that this bill would not establish any requirements for organically produced or processed products which are in conflict with the requirements established by the Organic Foods Production Act of 1990 and the USDA’s National Organic Program regulations?

Representative Blumenauer echoes his concerns and adds a few more –

I am also concerned about the language regarding interaction between wildlife, livestock and farming practices. Biodiversity is a prerequisite for a healthy farm and not something we should penalize farmers for. Last week in my state, staff from Oregon State University and the Xerces Society led a tour to four diverse Oregon farms where farmers are utilizing techniques such as naturescaping, floodplain restoration and natural hedgerows to encourage crop health, control pests and invasive species, and enhance soil quality. I am concerned that these practices, which are cost effective and bring benefits to the farm and local wildlife, would be in jeopardy under this legislation.

I believe we should target reform and safety efforts towards practices which have been directly linked to food disease outbreaks, rather than limiting approaches that farmers have used for centuries to reduce their dependence on pesticides, herbicides and other carbon intensive farming techniques.

I would like assurance from the Chairman that as the Food and Drug Administration develops these criteria, they will consider the needs of small farms and the practices of organic farmers.

You’ll note that these are most of the concerns I listed yesterday in my post (pretty much all except giving the FDA the power to ban raw milk sales). The representatives questioning the bill made no mention of the NAIS system being implemented on small scale farms, but that’s because the bill that went to floor today provided exemptions from NAIS-type requirements for small-scale farms selling more than half of their products directly to consumers. YAY! For those of you who called your representative, give yourself a pat on the back!

And, you’ll also be pleased to hear the assurances given in response to the concerns of Mr. Farr and Mr. Blumenauer:

The bill before us includes important language that would exempt from registration and from fees on-farm processors who sell more than half of their product by value directly to consumers or who process grain for sale to other farms. I believe these two provisions go a long way to satisfying the kinds of concerns being expressed. However, I realize there are other small farms or small local processors who will not fit under these exemptions who may face a hardship and I promise to work with my colleagues to address these concerns as the bill moves into conference.

With respect to the National Organic Program, it is my expectation that the FDA will work very closely with the NOP as it implements this bill to ensure there are no such conflicts. There is direction within the bill for the FDA to consider small farms, organic practices and conservation methods, and I trust that this will be followed. The intention of this bill is not to harm farming practices that have existed for centuries with minimal documented health risk.

So, it seems like the worst of this bill has been amended, and hopefully the rest will work towards creating a safer industrial food supply.

“I am with the man on the corner, he owns only one Tiger and it is in its cage”.................

[LOL, to my guess, a male tiger came to meet a lady tiger and got caught....]

One has to almost laugh at real life, the police copter had to land and refuel, so the tiger is free to roam through Las Vegas at will.

No, he can’t go outside, I will keep him indoors.

When I bring in the babies, I tame them, if possible and find them a good home.

Feral cats are smarter than the average house cat, so they are fun to live with.

I suspect that the dogs did get it and that is when the Mama attacked and that was the end of it all.

Mama was the alpha cat, she decided who came to eat here and chased away a lot of cats, the cats are now real quiet and upset, for they have no leader.

I have seen a lot of cats come to eat, but not stay and one leaves me thinking of it a year later.

A small real pug nosed Persian cat was here for a day, it was so matted that it would have been impossible to clean its fur.

It was so spooky, that if I looked at it, it trembled and was gone.

Why can’t they tell us their stories?

They let us know when they want something and will even say thank you, or do horrible things to get even.

I had one for years that I called Hitler, she disappeared last year, but her favorite trick, when I did not follow her instructions was to find my purse and pee in it........my checks were always watermarked and smelled of the strongest perfume that I owned.

Hitler wanted whatever I ate and would get nasty if her nachos did not taste of salsa and have cheese on them.

Ruby Tuesday’s Chicken Quesadillas

Serves 1

5 ounces boned and skinned chicken breast halves
Italian salad dressing (low-fat okay) to coat
1 (12-inch) flour tortilla
Margarine, melted, for coating
1 cup shredded Monterey jack/Cheddar cheese
1 tablespoon diced tomato
1 tablespoon diced jalapeno pepper
Cajun seasoning, to taste
1/2 cup shredded lettuce
1/4 cup diced tomato
Sour cream (low-fat okay)
Salsa, for dipping

Place chicken breast in a bowl with enough Italian dressing to coat; allow to marinate 30 minutes in refrigerator.

Grill marinated chicken until done in a lightly oiled pan. Cut into 3/4” pieces and set aside.

Brush one side of tortilla with margarine and place in frying pan over medium heat.

On one half of tortilla, add cheese, 1 tablespoon tomatoes, peppers, and Cajun seasoning (in that order). Make sure to spread to the edge of the half. Top with diced chicken, fold empty tortilla side on top, and flip over in pan so that cheese is on top of chicken.

Cook until very warm throughout.

Remove from pan to serving plate and cut into six equal wedges on one side of plate.

On the other side put lettuce, topped with 1/4 cup tomatoes, and then topped with sour cream.

Serve your favorite salsa in a small bowl on the side.

Damon’s Pecan-Crusted Fluffy Sweet Potatoes

Source: The Columbus Dispatch - Wednesday, May 3, 2000 - Recipe by Ann McDowell, Columbus

Whipped Potatoes:
3 1/2 cups cooked sweet potato pieces or
1 (40 ounce) can sweet potatoes, drained
4 egg whites
2 tablespoons flour

Pecan Crust:
1/3 cup firmly packed brown sugar
2 tablespoons light butter
1/3 cup chopped pecans

Heat the oven to 350 degrees F. Coat a 9- inch pie plate with vegetable cooking spray and set aside.

Whipped Potatoes: Using a food processor or electric mixer, beat the sweet potatoes, egg whites and flour just until smooth. Transfer the mixture to the prepared pie plate and bake for 15 minutes.

Meanwhile, prepare Pecan Crust: Place brown sugar and butter in a small microwaveable bowl. Heat on high power for about 20 seconds, until melted. Carefully remove the sweet potatoes from the oven and top with the pecans. Drizzle the brown sugar mixture over the pecans. Return to the oven and bake an additional 15 minutes, until golden and bubbly.

Dollywood Dipped Chocolate Chip Cookies

Source: Gary Nichols/Dollywood - Wednesday, December 6, 2000 - Recipe #2623

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar, firmly packed
1 teaspoon vanilla extract
2 eggs
12 ounces semi-sweet chocolate chips

Chocolate Dip
1 (6 ounce) bag semi-sweet chocolate morsels
1 (6 ounce) bag white chocolate morsels
Vegetable oil

Heat oven to 375 degrees F.

In a small bowl, combine flour, baking soda, and salt; set aside. In a large bowl combine butter, sugar, and vanilla extract; mix until creamy. Beat in eggs. Gradually add flour mixture. Stir in 12 ounces semi-sweet chips. Drop by level teaspoonfuls onto ungreased baking sheet. Bake 9-11 minutes. Cookies should still be soft when removed from oven. Place on cooling racks.

In separate small saucepan, melt bags of semi-sweet and white chocolate morsels. Add a small amount of vegetable oil to each saucepan. Dip each cookie halfway in dark chocolate and return to rack to cool. After cooled, dip the other half in the white chocolate. Allow to cool.

Dunkin Donuts Vanilla Filled Doughnuts

Donuts:
1 package regular or quick-acting yeast
1/8 cup warm water (105 to 115 degrees F)
3/4 cup lukewarm milk (scalded then cooled)
1/4 cup granulated sugar
1/2 teaspoon salt
1 egg
1/6 cup shortening
2 1/2 cups all-purpose flour

Vanilla Filling:
1/4 cup solid vegetable shortening
1/4 cup butter or margarine
1/2 teaspoon clear vanilla extract
2 cups sifted confectioners’ sugar
1 tablespoon milk

Dissolve yeast in warm water in mixing bowl. Add milk, sugar, salt, egg, shortening and 1 cup of flour. Beat on low speed scraping bowl constantly, 30 seconds. Beat on medium speed, scraping bowl occasionally, 2 minutes.

Stir in remaining flour until smooth. Cover and let rise in warm place until double, approximately 50-60 minutes.

Turn dough onto floured surface. Roll dough 1/2-inch thick. Cut with round cookie cutter. Cover and let rise on floured baking sheets until double, 30-40 minutes.

Heat vegetable oil in deep fryer or Dutch oven to 350 degrees F. Slide doughnuts into hot oil. Turn doughnuts as they turn golden brown, about one minute on each side. Remove carefully from oil (do not prick surfaces) and drain.

When cool, make small hole to insert vanilla filling (recipe follows) . Take a sharp narrow knife and carefully make a large cavity inside of the doughnut to hold the filling. Fill the doughnuts generously and dust heavily with confectioners’ sugar.

Vanilla Filling: Cream butter and shortening, gradually add sugar 1/2 cup at a time. Add milk and vanilla extract; beat until light and fluffy. Will keep for 2 weeks in airtight, refrigerated container. Fills 12 doughnuts.

Elsah Landing Pineapple-Coconut Pie

3 eggs, beaten
1 1/2 cups granulated sugar
1/4 teaspoon salt
2 tablespoons all-purpose flour
1/4 cup (1/2 stick) butter, melted
1 (8 ounce) can crushed pineapple
1 cup flaked coconut
1 (9-inch) pie shell, unbaked (see recipe)

Heat oven to 400 degrees F.

In a large bowl, combine beaten eggs, sugar, salt, flour, melted butter, pineapple and coconut. Mix until well-combined. Pour into pie shell. Bake at 400 degrees F for 15 minutes.

Lower temperature to 300 degrees F; bake for 20 to 30 minutes more or until center seems set and a knife inserted into the center comes out clean. Yield: 8 servings.

Elsah Landing Pastry for One-Crust Pie:
1 cup all-purpose flour
1/2 teaspoon salt
1/3 cup shortening
2 to 3 1/2 tablespoons ice water

Spoon flour lightly into a 1-cup dry measure. Level off. Sift flour and salt together into a large bowl. Cut in shortening with a pastry blender until mixture forms particles slightly larger than grains of rice. Sprinkle with ice water, 1 tablespoon at a time. Toss gently with a fork until all particles are uniformly moistened and will barely stick together. Shape mixture into a ball. Roll out on a lightly floured pastry cloth to form pie shell. Ease into pie plate; flute edges.

Yield: 1 (9-inch) pie crust.

Habanero’s Grill White Queso

Source: Habanero’s Grill, San Antonio, Texas

2 1/2 pounds Land O’Lakes White Extra Melt
3 poblano chiles, roasted, seeded and peeled
1/2 cup half-and-half
1/2 cup water
1 tablespoon white pepper, or to taste
1 teaspoon ground cumin
2 teaspoons chipotle concentrate (or 2 chipotle
chiles in adobo sauce, minced)
Tortilla chips, for serving

Cut the cheese into 1-inch cubes. Chop the roasted poblanos into 1/2-inch pieces.

Heat the half-and-half and the water in a pot over low heat. Add the cheese, poblanos, white pepper, cumin and chipotle. Stir until the cheese has melted and the ingredients are well blended and heated through.

Serve warm with tortilla chips.

Makes 20 servings.
