Home vegetable gardens appear to be booming as a result of the twin movements to eat local and pinch pennies.

At the Southeastern Flower Show in Atlanta this winter, D. Landreth Seed Co. of New Freedom, Pa., sold three to four times more seed packets than last year, says Barb Melera, president. "This is the first time I've ever heard people say, 'I can grow this more cheaply than I can buy it in the supermarket.' That's a 180-degree turn from the norm."

Roger Doiron, a gardener and fresh-food advocate from Scarborough, Maine, said he turned $85 worth of seeds into more than six months of vegetables for his family of five.

A year later, he says, the family still had "several quarts of tomato sauce, bags of mixed vegetables and ice-cube trays of pesto in the freezer; 20 heads of garlic, a five-gallon crock of sauerkraut, more homegrown hot-pepper sauce than one family could comfortably eat in a year and three sorts of squash, which we make into soups, stews and bread."

She compares the current period of market uncertainty with that of the early- to mid-20th century when the concept of victory gardens became popular.

"A lot of companies during the world wars and the Great Depression era encouraged vegetable gardening as a way of addressing layoffs, reduced wages and such," she says. "Some companies, like U.S. Steel, made gardens available at the workplace. Railroads provided easements they'd rent to employees and others for gardening."

Prevent lint from clinging to clothes by adding 1/2 cup white distilled
vinegar to the wash cycle.

To remove soap residue that makes black clothes look dull use white
distilled vinegar in your final rinse.

Get stained white socks and dingy dishcloths white again. Add 1 cup white
distilled vinegar to a large pot of water, bring it to a rolling boil and drop
in the articles. Let soak overnight.

Some stains on clothing and linens can be soaked out using equal parts milk
and white distilled vinegar.

Before washing a mustard stain, dab with white distilled vinegar.

Attack spaghetti, barbecue, or ketchup stains with a white distilled vinegar
and water solution.

Remove perspiration odor and stains on clothing, as well as those left by
deodorants, by spraying full-strength white distilled vinegar on underarm and
collar areas before tossing them into the washing machine.

Forgot that you left wet laundry in the machine and it now smells moldy?
Pour a few cups of white distilled vinegar in the machine and wash the clothes
in hot water. Then run a normal cycle with detergent.

Remove smoky odors from clothes by filling the bathtub with very hot water
and 1 cup white distilled vinegar. Hang the garments above the steaming water
and shut the door so the steam can penetrate the fibers.

Keep the steam iron clean and in good working order by getting rid of mineral
deposits in steam vents and spray nozzles. Fill the water chamber with a
solution of equal parts white distilled vinegar and distilled water. Set it in
an upright position and let it steam for about 5 minutes. When the iron is
cool, rinse the tank with water, refill and shake water through the vents onto
an old cloth. Test before using.

Remove scorch marks from an iron by rubbing it with a warmed-up solution of
equal parts white distilled vinegar and salt. If that doesn´t work, use a
cloth dampened with full-strength white distilled vinegar.

Remove musky smells from cotton clothes by sprinkling them lightly with
white distilled vinegar and then pressing them.

Get water and salt stains off shoes and boots by wiping them down with a
solution of equal parts white distilled vinegar and water.

Give patent leather shoes and bags a better shine by wiping them down with
white distilled vinegar.

Get cleaner laundry! Add about 1/4 cup white distilled vinegar to the last
rinse. The acid in white distilled vinegar is too mild to harm fabrics, yet
strong enough to dissolve the alkalies in soaps and detergents. Besides
removing soap, white distilled vinegar prevents yellowing, acts as a fabric softener
and static cling reducer, and attacks mold and mildew.

Eliminate manufacturing chemicals from new clothes by adding 1/2 cup white
distilled vinegar to the water.

Remove soap scum and clean the hoses of your washing machine with white
distilled vinegar. Periodically run the machine with only a cup of white
distilled vinegar in it-nothing else added to the wash cycle.

Bring out bright colors by adding 1/2 cup white distilled vinegar to the
rinse cycle.

Fluff up wool or acrylic sweaters (hand- or machine-washed) and rid them of
soap smell, with 1/2 cup white distilled vinegar in the last rinse water.

Get rid of the tiny holes left along the hemline when you take out the hem of
any garment by moistening a cloth with white distilled vinegar, placing it
under the fabric and ironing.

Health Tips Using Vinegar

Stop insect stings and bites from itching by dabbing them with a cotton ball
saturated with undiluted white distilled vinegar.

Soothe sunburn with a spray of white distilled vinegar, repeating as often
as you like. Ice-cold white distilled vinegar will feel even better, and may
prevent blistering and peeling.

For cuts and scrapes, use white distilled vinegar as an antiseptic.

Get rid of foot odor by washing feet well with antiseptic soap daily, then
soaking them in undiluted cider vinegar for 10 minutes or so.

Remember that
cotton socks aid odor control more effectively than wool ones.
Clean a hairbrush by soaking in a white distilled vinegar solution.

Tone facial skin with a solution of equal parts white distilled vinegar and
water.

If commercial aftershaves cause rashes and itching, try using undiluted
white distilled vinegar as an aftershave lotion.

Lighten body freckles (not facial freckles) by rubbing on full-strength
white distilled vinegar.

Eliminate bad breath and whiten your teeth by brushing them once or twice a
week with white distilled vinegar.

15. Cleaning Tips Using Vinegar

To shine chrome sink fixtures that have a lime buildup, use a paste made of
2 tablespoons salt and 1 teaspoon white distilled vinegar.

Make your own scouring cleanser by combining 1/4 cup baking soda with 1
tablespoon liquid detergent. Add just enough white distilled vinegar to give it a
thick but creamy texture.

Clean counter tops and make them smell sweet again with a cloth soaked in
undiluted white distilled vinegar.

Clean and deodorize a drain by pouring in 1 cup baking soda, then one cup
hot white distilled vinegar. Let this sit for 5 minutes or so then run hot
water down the drain.

Deodorize the garbage disposal by pouring in 1/2 cup baking soda and 1/2 cup
hot white distilled vinegar. Let sit for 5 minutes then run hot water down
the disposal.

Deodorize and clean the garbage disposal with white distilled vinegar ice
cubes. Make them by freezing full-strength white distilled vinegar in an ice
cube tray. Run several cubes down the disposal while flushing with cold water.

Clean the microwave by mixing 1/2 cup white distilled vinegar and 1/2 cup
water in a microwave-safe bowl. Bring it to a rolling boil inside the
microwave. Baked-on food will be loosened, and odors will disappear. Wipe clean.

Clean the shelves and walls of the refrigerator with a half-and-half
solution of water and white distilled vinegar.
Cut the grime on the top of the refrigerator with a paper towel or cloth and
full-strength white distilled vinegar.

Avoid the bad smell when you heat up a newly cleaned oven by using a sponge
soaked in diluted white distilled vinegar for the final rinse.

To clean a grease splattered oven door window, saturate it with
full-strength white distilled vinegar. Keep the door open for 10 to 15 minutes before
wiping with a sponge.

Remove soap buildup and odors from the dishwasher by pouring a cup of white
distilled vinegar inside the empty machine and running it through a whole
cycle. Do monthly.

To prevent good glassware from getting etched by minerals, wash then spray
with full-strength white distilled vinegar. Give the glasses a hot water rinse
before letting them dry or drying them with a towel.

For cloudy glassware, soak paper towels or a cloth in full-strength white
distilled vinegar and wrap around the inside and outside of the glass. Let sit
awhile before rinsing clean.

Get rid of lime deposits in a tea kettle by adding 1/2 cup white distilled
vinegar to the water and letting it sit overnight. If more drastic action is
needed, boil full-strength white distilled vinegar in the kettle a few
minutes, let cool and rinse with plain water.

Remove mineral deposits from coffee makers with white distilled vinegar.
Fill the water reservoir with 1 cup or more of white distilled vinegar and run
it through a whole cycle. Run it once or twice more with plain water to rinse
clean. (Check the owners´ manual first.)

Remove stains from coffee and teacups by scrubbing them gently with equal
parts of salt (or baking soda) and white distilled vinegar. Rinse clean.

For stained and smelly plastic food containers, wipe them with a cloth
dampened with white distilled vinegar.

Remove odors from a lunch box by placing inside a slice of bread that has
been soaked in white distilled vinegar. Leave overnight.

Remove ugly film in narrow-necked glass jars, flower vases, and bottles by
letting undiluted white distilled vinegar sit in them for a few hours. Add a
little rice or sand and shake vigorously to loosen stubborn stains. Repeat if
necessary.

To clean tarnished brass, copper, and pewter, use a paste with equal amounts
of white distilled vinegar and table salt.

Make a metal cleanser by adding enough white distilled vinegar to 2
tablespoons of cream of tartar to make a paste. Rub it on and let it dry on the
surface. Wash it off and dry with a soft cloth.

Polish brass and copper with a mixture of 2 tablespoons of ketchup and 1
tablespoon white distilled vinegar. Rub it on with a clean cloth until dry and
shiny.

Remove dark stains on an aluminum pot by boiling a mixture of 1 cup white
distilled vinegar and 1 cup hot water.

Discourage ants by spraying undiluted white distilled vinegar outside
doorways and windowsills, around appliances and wherever you find the pests coming
in.

Get rid of fruit flies by setting out a small dish of undiluted white
distilled vinegar.

Clean the wheel of a can opener using white distilled vinegar and an old
toothbrush.

Remove the smell of spoiled food from a refrigerator by first rinsing the
area with soap and water. Spray surfaces with full-strength white distilled
vinegar and wipe them down with a damp cloth or sponge.

Fill some containers
with baking soda and place inside. Close the door and leave for a few days.

Wipe grease off exhaust fan grids, the inside of your oven, or anywhere
grease gathers with a sponge soaked in white distilled vinegar.

To make cleaning the grill easier, spray a solution of half water and half
white distilled vinegar on the cooking surface.

To remove a label, decal, or price tag, cover with a cloth soaked in white
distilled vinegar. Leave the cloth on overnight and the label should slide
off.

Renew sponges and dishrags by placing them in just enough water to cover
them. Then add 1/4 cup white distilled vinegar. Let them soak overnight.
Get rid of calcium deposits on faucets by soaking a cloth or paper towel in
white distilled vinegar and wrapping the area tightly. Let this sit for a
couple of hours or overnight.
Remove soap buildup from faucets by scrubbing them with a solution of 1 part
salt to 4 parts white distilled vinegar.

Rid a faucet of lime deposits by tying a plastic bag containing 1/2 to 1/3
cup of white distilled vinegar around it and leaving it there for two or three
hours. If mineral deposits don´t wipe off, scrubbing with an old toothbrush
should complete the job.

Shine colored porcelain sinks by scouring them with undiluted white
distilled vinegar.

Rinse away soapy film on countertops with a solution of white distilled
vinegar and water.

Clean grout by letting full-strength white distilled vinegar sit on it for a
few minutes and scrubbing it with an old toothbrush.
Kill germs all around the bathroom with a spray of full-strength white
distilled vinegar. Wipe clean with a damp cloth.

To remove grime, mildew, and scum from the tub, tile, shower curtain or
door, wipe with undiluted white distilled vinegar. Rinse with water.

Spray shower doors with full-strength white distilled vinegar after you´ve
squeegeed the glass, or before you step in and turn on the water. It will help
release the hard water deposits so they don´t remain on the glass.

Mix up an inexpensive tile cleaner by adding 1/2 cup baking soda, 1 cup
white distilled vinegar, and 1 cup ammonia to a gallon of warm water.

Get rid of stubborn bathtub film by wiping it with white distilled vinegar
and then scouring with baking soda.

Soak a sponge or loofah overnight in a strong white distilled vinegar and
water solution to remove dirt and slime. Rinse several times with cold water
and let air dry (in the sun if possible).

Clean shower door tracks by filling them with white distilled vinegar and
letting it sit for a few hours. Pour hot water into the tracks and wash and
scrub away the scum with a toothbrush.

To clean a scummy showerhead, pour 1/2 cup baking soda and 1 cup white
distilled vinegar into a sandwich bag and tie it around the showerhead. Let this
set for an hour after the bubbling has stopped. Remove the bag and then turn
on the water.

Deodorize the toilet bowl by allowing 3 cups white distilled vinegar to sit
in it for about a half hour before flushing.

To make the toilet bowl sparkle, pour in a cup or more of diluted white
distilled vinegar and let it sit several hours or overnight. Scrub well with the
toilet brush and flush.

Freshen air in the bathroom by spraying into the air a solution of 1
teaspoon baking soda, 1 tablespoon white distilled vinegar, and 1 cup water.

Get a shining finish on a no-wax vinyl or linoleum floor by cleaning it with
a solution of one cup white distilled vinegar for every gallon of water.

Apply full-strength white distilled vinegar directly to tough linoleum
stains. Leave it on for 10 to 15 minutes before wiping it up. If that doesn´t
work, apply white distilled vinegar again and then sprinkle some baking soda over
the white distilled vinegar. Scrub the area with a brush or sponge. Rinse
clean with water.

For an economical and environmentally friendly floor cleaner, mix a solution
of 3 drops dishwashing liquid to 1/3 part white distilled vinegar, 1/3 part
alcohol, and 1/3 part water. Spray sparingly and mop for a fast clean-up.

Some carpet stains can be removed with a paste of 2 tablespoons white
distilled vinegar and 1/4 cup salt or baking soda. Rub into the carpet stain and
let dry. Vacuum up the residue the next day. (Always test on an out-of-sight
part of the carpet first).

Bring out the color in carpet by brushing it with a solution of 1 cup white
distilled vinegar for every gallon of water. (Always test on an out-of-sight
part of the carpet beforehand).

To reduce soap bubbles in a steam cleaner add about 1/4 cup white distilled
vinegar. Use the same amount in the rinse water to remove detergent residue
and make carpets stay fresh longer.

Wash indoor/outdoor carpet with a solution of 1 cup white distilled vinegar
in 1 bucket of warm water. Scrub using a brush or a broom and then hose off.

Clean up pet accidents by first blotting up the area and then adding a white
distilled vinegar-and-water solution. Blot until it is almost dry. Then
sprinkle baking soda over the area and let it dry. Vacuum up the residue the next
day.

Create your own window cleaning solution by combining 1/2 cup non-sudsy
ammonia, 1 cup white distilled vinegar, and 2 tablespoons cornstarch in a gallon
of water.

Remove the wax residue left by commercial window cleaners with a solution of
2 cups water, 1 cup white distilled vinegar and 1 teaspoon of liquid soap or
detergent.
To remove paint from windows try using undiluted, hot white distilled
vinegar. Give the solution time to soften the paint before removing with a razor
edge tool.

To remove paint splatters from windows apply full-strength white distilled
vinegar with a clean paintbrush.

Get rid of mildew, dust, and stale odors by wiping down walls with undiluted
white distilled vinegar on a cloth or a sponge mop.

Clean woodwork and walls with a mixture of 1 cup white distilled vinegar, 1
cup baking soda, 1/2 cup ammonia and 1 gallon warm water. Wipe on with a
sponge or damp-not wet-towel.

Clean wood paneling with a solution of 1/4 cup olive oil, 1/2 cup white
distilled vinegar, and 2 cups warm water. Wipe on with a soft cloth.

Remove wallpaper easily by using a paint roller to wet the surface very
thoroughly with a solution of equal parts white distilled vinegar and hot water.
Or spray on until saturated.

Get decals off walls or doors by letting undiluted white distilled vinegar
soak into them for several minutes before trying to peel them off. Repeat if
necessary.

Remove white water rings from wood with a solution of equal parts white
distilled vinegar and vegetable oil. Rub with the grain.

Remove fireplace soot and grime with undiluted white distilled vinegar. Use
a brush to scrub and a towel to blot up the wetness and dirt.
Clean fireplace glass doors with a solution of 1 part white distilled
vinegar to 2 parts water. Spray or wipe on, then wipe clean with a dry cloth.

To kill germs, spray full-strength white distilled vinegar on doorknobs and
then wipe them dry.

Remove the smell of a dead mouse or other rodent (after removing all animal
remnants) by wiping down the area with either white distilled vinegar or
bleach. Then place a fabric softener sheet in the area to remove any lingering
odors.

Never use white distilled vinegar on marble. The acid can damage the
surface.

Before painting old concrete, clean with full-strength white distilled
vinegar. Let it air dry.

Clean hardened paint brushes by simmering them in a pot with white distilled
vinegar. Soak them first for an hour before bringing the white distilled
vinegar to a simmer. Drain and rinse clean.

Remove mud and stains from plastic, fiberglass, or aluminum sports equipment
by applying a paste of 1 part white distilled vinegar to 3 parts baking
soda. Wipe off with soapy water and rinse with clear water.

Clean your grill by spritzing white distilled vinegar over wadded up
aluminum foil and scrubbing the grill vigorously with it.

To remove film in glass baby bottles, fill with equal parts hot water and
white distilled vinegar. Let sit for at least an hour. Scrub with a bottle
brush.

To clean and disinfect baby toys add a good-sized splash of white distilled
vinegar to soapy water.

Clean vinyl baby books or board books by wiping with white distilled
vinegar. Wipe clean with a damp sponge or cloth.

Clean scissors that have become sticky (after cutting tape, for instance)
with a cloth dipped in undiluted white distilled vinegar.

Clean and deodorize urine on a mattress with a white distilled vinegar and
water solution. Then sprinkle the area with baking soda and let dry. Brush or
vacuum the residue after it is dry to the touch.

Shine pennies by soaking them for a couple of hours or overnight in a glass
or bowl of undiluted white distilled vinegar.

Keep car windows frost-free overnight in winter by coating them with a
solution of 3 parts white distilled vinegar to 1 part water.

Polish car chrome with full-strength white distilled vinegar on a soft

Rid the windshield wipers of road grime by wiping them with a white

Remove the leftover odor after a rider has been carsick by leaving a bowl of

Get rid of hard water stains on your car with a rinse made from 3 parts soft

and water.

Remove winter road salt residue on car carpeting by spraying with a mixture

Pet Tips Using Vinegar

Give your dog a gleaming coat by spraying or rubbing with a solution of 1
cup white distilled vinegar to 1 quart water. As a bonus, you save the cost of
an expensive shine product used on show animals. (Works even on a horse!)

Keep a dog from scratching its ears by wiping them out regularly with a soft
cloth dipped in undiluted white distilled vinegar.

Remove skunk odors by wiping down the animal with a 50-50 solution of white
distilled vinegar and water, followed by a plain-water rinse. Repeat if
necessary.

Discourage a cat from sitting on a certain windowsill or other surface, or
from scratching upholstery, by spraying white distilled vinegar on the item.

Test first on an unnoticeable area to be sure there won´t be a discoloration.

Keep a cat out of a garden area by placing paper, a cloth, or sponge there
that has been soaked in white distilled vinegar.

Get rid of the deposits and water lines that form in aquariums and fish
bowls by wiping them down with white distilled vinegar and following with a good
rinse. For stubborn deposits, soak for several hours or overnight.

Keep the birdbath clean by scrubbing it often with undiluted white distilled
vinegar. Rinse well.

Keep flies away from horses or other outdoor pets by spraying a mixture of
water and white distilled vinegar around the area where the animals are.

Remove cat litter odor by pouring ½ inch of white distilled vinegar in the
empty litter box. Let it stand for 20 minutes, swish it around, then rinse
with cold water.

Kill fleas by adding a little white distilled vinegar to your dog or cat´s
drinking water.

Stop a dog from barking with a spray bottle filled with equal amounts of
water and white distilled vinegar. When the dog barks, spray the vinegar water
in its direction but not in the face.

Remove pet odors. After cleaning, cover the area with baking soda. Let it
stand overnight. The next day vacuum up the baking soda and wash the area with

Cats hate the smell of vinegar. If you have a cat that is marking its
territory around your house, spray the area with white distilled vinegar then rinse
with a hose.

Stop cats from fighting with each other with a spritz of a white distilled
vinegar and water solution.

Take your bananas apart when you get home from the store.
If you leave them connected at the stem, they ripen faster.

Store your opened chunks of cheese in aluminum foil.
It will stay fresh much longer and not mold!

Peppers with 3 bumps on the bottom are sweeter and better for eating.
Peppers with 4 bumps on the bottom are firmer and better for cooking.

Add a teaspoon of water when frying ground beef.
It will help pull the grease away from the meat while cooking.

To really make scrambled eggs or omelets rich add a couple of
spoonfuls of sour cream, cream cheese, or heavy cream in and then beat them
up

For a cool brownie treat, make brownies as directed. Melt Andes mints
in double broiler and pour over warm brownies. Let set for a wonderful
minty frosting.

Add garlic immediately to a recipe if you want a light taste
of garlic and at the end of the recipe if your want a stronger taste of
garlic.

Leftover snickers bars from Halloween make a delicious dessert. Simply
chop them up with the food chopper. Peel, core and slice a few apples.
Place them
in a baking dish and sprinkle the chopped candy bars over the apples.
Bake at 350
for 15 minutes!!! Serve alone or with vanilla ice cream. Yummm!

Reheat Pizza
Heat up leftover pizza in a nonstick skillet on top of the stove, set
heat to med-low
and heat till warm. This keeps the crust crispy. No soggy micro pizza.
I saw this on
the cooking channel and it really works.

Easy Deviled Eggs
Put cooked egg yolks in a zip lock bag. Seal, mash till they are all broken
up.
Add remainder of ingredients, reseal, keep mashing
it up mixing thoroughly, cut the tip of the baggy, squeeze mixture into egg.
Just throw bag away when done easy clean up.

Expanding Frosting
When you buy a container of cake frosting from the store, whip it with
your mixer
for a few minutes. You can double it in size. You get to frost more
cake/cupcakes
with the same amount. You also eat less sugar and calories per serving.

Reheating refrigerated bread
To warm biscuits, pancakes, or muffins that were refrigerated, place them in
a microwave with a cup of water. The increased moisture will keep the food
moist and help it reheat faster.

Newspaper weeds away
Start putting in your plants, work the nutrients in your soil. Wet
newspapers,
put layers around the plants overlapping as you go cover with mulch and for-
get about weeds. Weeds will get through some gardening plastic they will not
get through wet newspapers.

Broken Glass
Use a wet cotton ball or Q-tip to pick up the small shards of glass
you can´t see easily.
No More Mosquitoes
Place a dryer sheet in your pocket.
It will keep the mosquitoes away.

Squirrel Away!
To keep squirrels from eating your plants, sprinkle your plants with
cayenne pepper.

The cayenne pepper doesn´t hurt the plant and the squirrels won´t come near
it.

Flexible vacuum
To get something out of a heat register or under the fridge add an
empty paper towel
roll or empty gift wrap roll to your vacuum. It can be bent or
flattened to get in nar-
row openings.

Reducing Static Cling
Pin a small safety pin to the seam of your slip and you will not have
a clingy skirt
or dress. Same thing works with slacks that cling when wearing panty hose.
Place pin in seam of slacks and ... ta da! ... static is gone.

Measuring Cups
Before you pour sticky substances into a measuring cup, fill with hot water.
Dump out the hot water, but don´t dry cup. Next, add your ingredient, such
as peanut butter, and watch how easily it comes right out.

Foggy Windshield?
Hate foggy windshields? Buy a chalkboard eraser and keep it in the glove box
of
your car . When the window s fog, rub with the eraser! Works better
than a cloth!

Reopening envelope
If you seal an envelope and then realize you forgot to include something
inside,
just place your sealed envelope in the freezer for an hour or two.
Viola! It unseals
easily.

Conditioner
Use your hair conditioner to shave your legs. It´s cheaper than
shaving cream and
leaves your legs really smooth. It´s also a great way to use up the
conditioner you
bought but didn´t like when you tried it in your hair.

Goodbye Fruit Flies
To get rid of pesky fruit flies, take a small glass, fill it 1/2” with
Apple Cider Vinegar
and 2 drops of dish washing liquid; mix well. You will find those
flies drawn to the
cup and gone forever!

Get Rid of Ants
Put small piles of cornmeal where you see ants They eat it, take it
“home,” can´t
digest it so it kills them. It may take a week or so, especially if it
rains, but it works
and you don´t have the worry about pets or small children being harmed!

that are Usually Good Buys

When it comes to Convenience Foods, most of us are coming from 2 opposite sides of the fence. We either love ‘em or we hate ‘em. I tend to be from the “Hate ‘Em-Camp” so you’ll have to overlook any obvious prejudices on my part. I’ll try to keep these prejudices under my hat the best I can. Regardless of which side you associate yourself with the fact of the matter is that some convenience foods really do what they’re supposed to do. They save us a great deal of work and time without costing much more than the homemade-from-scratch-version. Amazingly, a few even cost less. There aren’t a lot of convenience foods that fall into this golden category. The ones that do have definitely earned a spot on every budget-shopper’s grocery list.

Sausage Roll Tutorial
I really hope I’m posting this in time for Christmas! I’ve blogged before that I loosely base my sausage rolls on this recipe from RecipeZaar, but I thought I would do a complete tutorial to show you what I do.

I used to use whole sausages and pie pastry for my sausage rolls but Hubby hates sausage (I know weird) and Dallas didn’t like pie pastry on the rolls. I had to come up with something that both of them liked. I now use ground pork and puff pastry and the two of them both love this recipe, it’s a winner!

The Story Of Candy Cane Fudge.

As a child I was told that the colors in the candy cane were very important.

My Mother taught us that the red reminded us of the blood that Jesus and our
soldiers shed for our freedom, and the white reminds us of the unconditional
love shared between a Mother and a Daughter. So candy canes were very
special to Mother and I, so much so that I some times told people about the colors
when we were overseas.

When I was 6 years old and living in Korea on a military base with my
parents, Christmas was coming fast and there were no candy canes any where on base.

I was really fretting because Mother and I made Candy Cane Fudge and it was
just not Christmas with out it. The entire house would smell like candy canes
for days after making that fudge, and the smell reminded me of Grandmother
and Grandfather, snow, Jesus, and the soldiers who fought for us.

Well I was standing in line at the PX with Mother when a nice gentleman
asked if we were ready for Christmas, of course I piped right up and said “we can
not have Christmas because it just will not smell like Christmas with out
the candy canes.” Mother tried to shhh me and this man asked me why candy canes
are so important. Well, I told him how they are colored for Jesus and the
soldiers who have fought for us and are still fighting, and for Mothers and
Daughters who are waiting for those soldiers to come home.

And I explained that
it is important to remember each of the people candy canes represent and not
just for Christmas, that we should have candy canes all year long. That nice
gentleman patted me on top of the head and offered me a starlite peppermint
candy, I politely thanked him and said “ but sir, a candy cane is special,
just like you can not replace Jesus or soldiers or Mothers.”

On Christmas eve there was a knock on the front door, Dad answered it and
called me into the room and said it was for Mother and I .

Two soldiers were at
the door with a box filled with candy canes of all sizes, they handed the
box to my Dad and said “compliments of all the soldier of the United States of
America, thank you for remembering us.

My Mother cried and hugged each of the
soldiers, she gave them each a large candy cane and asked them to stop by
Christmas day for Candy Cane Fudge.

Every year from that day on when Mother and I would make candy cane fudge we
would ship or deliver a package of Candy Cane Fudge to a military unit with
a card that simply read, “Thank You” Included was always the story of candy
cane fudge.

Today I still make Candy Cane Fudge and am sure to share it and it’s origins
with family and friends. And as always, a package finds it’s way to a
military unit with a simple and heart felt note that says....THANK YOU !

Mother’s Candy Cane Fudge
1 & 2/3 c sugar
2/3 C evaporated milk
2 tbsp butter
1/4 tsp salt
2 C mini marshmallows
1 & 1/2 C semi sweet chocolate chips
1/2 tsp vanilla
1/4 tsp peppermint extract
1/4 C crushed candy canes (12 regular canes)

Butter 8 inch foil lined pan, crush candy canes and set aside.

Combine sugar, evaporated milk, butter and salt in medium heavy duty
saucepan, bring to full rolling boil over medium heat while stiring constantly. boil
4 to 5 minutes, remove from heat.

Stir in marshmallows, chocolate chips,
vanilla and peppermint extracts and stir vigorously for at least 2 minutes until
marshmallows and chips are melted. pour into foil lined buttered 8 inch pan
and allow to cool 1 minute, sprinkle crushed candy canes over top of fudge
and pat down slightly. Allow to cool 2 to 4 hours, lift foil out of pan and
peel from fudge before cutting, makes about 30 pieces.

Buttered Rum Sauce

3/4 cup whipping cream
3/4 cup granulated sugar
1/4 cup butter
3 Tbs. Captain Morgans Spiced Dark Rum
1/2 tsp. pure vanilla extract
1 cinnamon stick

Combine cream and sugar in an 8” Dutch oven; stir to mix. Add cinnamon stick. Cook using 10-12 briquettes bottom until mixture comes to a low boil, then reduce briquettes to 6 on bottom. Continue cooking for 1 to 2 minutes until sauce thickens slightly. Remove sauce from heat and stir in butter, rum, and vanilla. Use sauce warm.
Yield: About 1 cup

2 C. water
1 lb. fresh asparagus trimmed and cut into 2” pieces
1 T. orange juice
1 T. olive oil
2 t. grated orange peel
1/4 t. lemon pepper seasoning
In a large skillet bring water to a boil. Add asparagus, cover and cook for 2-3 minutes. Drain and immediately place asparagus in ice water. Drain; pat dry and put in a bowl.
In a small bowl, whisk the orange juice, oil, orange peel and lemon pepper. Pour over asparagus; toss to coat.

3 c Chicken broth
1/2 c Chopped celery

8 to 10 servings

8 eggs, beaten
2 c. cooked crumbled sausage OR cubed fully cooked ham
2 c. cubed process American cheese
2 c. milk
1 c. crushed saltines (about 24 crackers)
1/4 c. chopped onion
1/4 c. chopped green pepper
1/4 c. chopped sweet red pepper
1/2 to 1 t. salt

Combine all ingredients in a large bowl; pour into a greased and
shallow 3-quart or 13x9 inch baking dish. Bake, uncovered, at 350 for
45 minutes or until knife inserted near the center comes out clean.
Let stand for 5 minutes before serving.

NOTE: This dish may be prepared in advance, covered, and refrigerated
over night. Remove from the refrigerator 30 minutes before baking.

Grandma Kruger’s Toffee Recipe

3/4 cup of brown sugar
1 stick of butter
Chocolate chips
Chopped Almonds or pecans. Enough to cover the bottom a 9” x 9” pan with some extra to put on top of the chocolate chips
Melt the sugar and butter in a heavy bottomed saucepan and bring to a boil over medium heat. Boil for seven minutes stirring constantly. Test in cold water. When the thread cracks in the cold water, pour mixture into a buttered 9” x 9” pan with chopped nuts in the bottom. Put chocolate chips on top. Cover to contain the heat to melt the chocolate. Spread the melted chocolate and sprinkle with remaining chopped nuts. Let cool.

The opportunities that this blog has presented me continue to astound me. I have an exciting project launching in January! It’s definitely a step outside my comfort zone, but I’m willing to try almost anything once, and this sounds like a lot of fun.

Beginning in January, Jenn from Frugal Upstate and I will be partnering to host a radio show on Blog Talk Radio! We’re tentatively scheduled on Monday evenings at 8:30 EST/5:30 PST.

Our vision is to chat about frugal topics, pick the brains of guests on our show, and answer questions from listeners who call in. You all can either listen live, or the archive will be posted shortly after the show for download or listening online. (both options are free).

Listening online is absolutely free, and you can even call in and listen from your cell phone! That’s also free on the Blog Talk Radio end, but cell phone charges will be incurred, according to your plan. In addition, there will be a chat room available during the show for people to bounce around frugal ideas.

This is where I need your help. If you were to listen to a radio show about frugality, what topics would you like to hear about? What time slot would be best? Are there any guests you’d like to hear from?

I’m just so excited about another opportunity to spread the word about the benefits of a frugal lifestyle! So don’t be shy! If you have an idea, let me know, and we’ll see what we can do with it!

CHESTNUT ‘N HONEY CORNBREAD

1 C yellow cornmeal
1/2 c unbleached flour
2 tsp baking powder
3/4 tsp salt
1/4 tsp baking soda
1/3 C honey
1 tbsp brown sugar
1 1/2 C chestnut flour
1/2 C buttermilk
2 large eggs
1/2 C water (adjust if needed) Preheat oven to 350o F. Spray an 8-inch
square pan with non-stick spray.
Combine dry ingredients in a bowl. Add buttermilk, eggs, honey and water.

Pour into prepared pan and bake at 350o F for 45-50 minutes. Cool on rack
for 10 minutes. Serve warm or at room temperature. Serves 6

This recipe sounds awesome, but..........where can one get chestnut flour ?

Apple-Cranberry Dessert

cups sliced peeled apples (about 6 medium)

cup sweetened dried cranberries

teaspoon ground cinnamon

Vanilla ice cream, if desired

Heat oven to 375ºF. In large bowl, mix apples, cranberries, cinnamon, syrup and lemon juice. Spoon into ungreased 8-inch square baking dish.

In medium bowl, mix remaining ingredients except ice cream with fork until crumbly. Sprinkle over fruit mixture.

Bake 35 to 40 minutes or until apples are tender, juices are bubbly and topping is golden brown. Cool about 30 minutes. Serve warm with ice cream.

High Altitude (3500-6500 ft) Bake 43 to 48 minutes.

* 5 pounds pork spareribs
* 1/3 cup ketchup
* 3 tablespoons white sugar
* 1 teaspoon salt
* 2 teaspoons minced garlic
* 1/3 cup soy sauce
* 1/3 cup hoisin sauce
DIRECTIONS
1. Simmer ribs in water for 45 minutes. Mix together ketchup, sugar, salt, garlic, soy sauce and hoisin sauce. Pour over ribs in dish; Marinate overnight in refrigerator. Bake or grill over fire for half hour.
Note
Hoisin sauce , also called Peking sauce, is a thick, reddish-brown sauce that is sweet and spicy, and widely used in Chinese cooking. It’s a mixture of soybeans, garlic, chile peppers and various spices. It can be found in Asian markets and many large supermarkets. Look in the Asian or ethnic section. If this item is not in stock at your local store, ask your grocer to special order it for you. Most grocers will be happy to do this for their customers.

1 (7.5 oz) jar Marshmallow Fluff
2/3 cup evaporated milk
6 Tbsp. unsalted butter
1/2 tsp. salt
1 (12oz) bag white chocolate chips
2 cups chopped almonds, pecans or walnuts
1 tsp. vanilla extract

Line an 8_inch square baking pan with heavy-duty foil; leaving a 1-inch overhang on two sides. In heavy medium saucepan, combine brown sugar, Marshmallow Fluff, milk, butter and salt and bring to boil over medium-high heat. Reduce heat to simmer, stirring constantly with a wooden spoon, for 5 minutes. Remove pan form heat, add white chocolate chips and stir until melted. Blend in nuts and vanilla. Scrape fudge into prepared pan. Refrigerate until firm, 2 to 3 hours. Remove fudge from pan, using foil to lift it out, then cut into 16 cubes; serve. Or chill in a an airtight container for up to 1 week.

Scalloped Spinach

2 pkg. frozen chopped spinach (10 oz)
3 beaten eggs
3/4 cup milk
3/4 cup shredded American cheese
3 T. chopped onion
1/2 t. salt
Dash pepper
1 cup coarse soft breadcrumbs
1 T. melted margarine

Cook spinach as pkg. directs. Drain well. In bowl, mix eggs, milk, 1/2 cup of the cheese, onion, salt and pepper. Stir in drained spinach. Turn into greased 8 x 8 inch baking dish. Bake at 350 for 25 minutes. Mix crumbs, remaining 1/4 cup cheese and butter. Sprinkle on top of spinach. Bake 10 to 15 minutes more or until knife inserted off center comes out clean. Let stand 5 minutes before serving. Serves 6

Roasted Potatoes with Chilies, Bacon and Cheese

2 large baking potatoes
4 bacon slices
1/2 cup minced onion
1 jalapeno chili, seeded and minced
Salt and pepper
4 oz. mozzarella cheese
Sour cream

Preheat oven to 350. Roast potatoes until tender, about 1 1/2 hours. Let stand until just cool enough to handle. Halve potatoes lengthwise; using small sharp knife, cut 4 lines lengthwise and 7 lines crosswise forming 1/2 inch cubes in potato pulp of each half. Cut down to but not through skin. Fry bacon in small skillet over medium heat until crisp. Remove and drain on paper towels. Don’t wash skillet. Finely chop bacon; transfer to bowl. Stir in onion and chili. Press some of bacon mixture into each potato half. Can be made ahead and stored at room temperature. Heat rendered bacon fat in same skillet over medium heat. Sprinkle potatoes with salt and pepper. Add flat side down to skillet and cook until golden brown and heated through. Turn and cook until skin side is crisp. Preheat broiler. Sprinkle potatoes with cheese. Arrange in broiler pan; broil until cheese melts, watching carefully. Serve with sour cream.

Grace’s Spaghetti for a Crowd

4 lbs. lean ground beef
2 pkg. sliced pepperoni (4 oz. each)
4 cups finely chopped onion
4 cloves garlic, finely chopped OR 1 1/2 t. garlic powder
3 cans tomatoes, broken up (28 oz. each)
5 cans tomato paste (6 oz each)
4 cups water
1 to 2 T. sugar
2 T. Worcestershire sauce
1 T. basil leaves
1 T. oregano
1 T. salt
1/2 t. pepper
4 bay leaves
3 lbs. Italian style spaghetti,cooked and drained
Grated Parmesan cheese

In large kettle, brown meat and pepperoni. Pour off fat. Add onion. Cook and stir until tender. Add remaining ingredients except spaghetti and cheese. Mix well. Bring to boil. Reduce heat and simmer uncovered 2 hours. Stir occasionally. Serve over hot cooked spaghetti with grated cheese. refrigerate leftovers.

1/4 cup butter
1 small clove garlic, split
1 lb. scallops, fresh or frozen (defrosted)
Salt and pepper to taste
tartar sauce
Lemon wedges

In pan, heat butter and garlic slowly. Discard garlic. Add scallops and cook 5 minutes. Season with salt and pepper. Serve at once with tartar sauce and lemon wedges. Serves 4

1/4 cup hot water
1 cup catsup
2 cans pork and beans

Preheat oven to 350. Dissolve sugar and molasses in hot water; Add catsup to mixture. mix the mixture with the pork and beans and put in beat pot. Bake until hot and bubble, about 1 hour.

1 zucchini, chopped
1 teaspoon Kosher salt
1 med. chopped onion
3 quarts (12 cups) chicken stock

In large pot, combine chicken stock with thyme, cayenne pepper, and bay leaves over med-low heat.

In pan, saute onion in olive oil until lightly browned, and add to the pot.

Saute zucchini with olive oil in pan until lightly browned, and add to pot.

Add cabbage and vinegar to pot, and continue to cook over med-low heat for 20 minutes, or until cabbage has softened.

Being careful to avoid the bay leaves, remove about half of the soup to a food processor and puree. Return to pot.

Add diced kielbasa, and simmer for another 20-30 minutes. Serve with sour cream.

1/2 pound uncooked shrimp - cleaned, shelled, and deveined
1/3 pound cod (leave in one piece)
4 cup heavy cream
1 small can crab meat
1/2 cup dry sherry
chives for garnish (optional)

Sautè shallots and diced celery in butter, until soft. Add thickener, if desired, and stir with a wire whip for 5 minutes, on low heat and set aside.

Bring 1 quart of water to a boil. Add chicken base, clams with juice, all of the shrimp and the whole pieces of cod and salmon.

Return to a boil; lower the heat and simmer for about 5 minutes. Strain the stock, and reserve the seafood. Stir the shallot/butter mixture into the stock.

Flake the large pieces of boiled fish and add the canned crabmeat. Add the heavy cream and sherry.

Bring to a simmer and heat through. Add chives, if desired.

Slow Cooker Chicken Creole

4 boneless chicken breast halves
salt and pepper to taste
Creole-style seasoning to taste
1 (14.5 oz) can stewed tomatoes with liquid
1 stalk celery, diced
1 green bell pepper, diced
3 cloves garlic, minced
1 diced onion
1 (4 oz) can mushrooms, drained
1 fresh jalapeno pepper - seeded and chopped

Place chicken breasts in slow cooker.

Season with salt, pepper, and Creole-style seasoning to taste.

Stir in tomatoes with liquid, celery, bell pepper, garlic, onion, mushrooms, and jalapeno pepper.

Cook on Low for 10 to 12 hours, or on High for 5 to 6 hours.

Calories: 191; Fat: 1.8g; Cholesterol: 68mg; Sodium: 431mg; Carbs: 14.3g; Fiber: 2.7g; Protein: 29.6g.

Slow Cooker Chile Verde

3 tablespoons olive oil
1/2 cup onion, chopped
2 cloves minced garlic
3 pounds cubed boneless pork shoulder
5 (7 oz) cans green salsa
1 (4 oz) can diced jalapeno peppers
1 (14.5 oz) can diced tomatoes

Heat the oil in a large skillet or Dutch oven over medium heat. Add the onion and garlic; cook and stir until fragrant.

Add the cubed pork, and cook until browned on the outside.

Transfer the pork, onions, and garlic to a slow cooker, and stir in the green salsa, jalapeno peppers, and tomatoes. Cover, and cook on High for 3 hours.

Reduce the setting to Low, and cook for 4 to 5 more hours.

Calories: 265; Fat: 12.4g; Cholesterol: 64mg; Sodium: 765mg; Carbs: 12.1g; Fiber: 1g; Protein: 22.5g.

I’ve played with various forms of low-power non-electric heating over
the years.

It’s possible to build a variant of this one yourself:
http://www.alternative-energy-news.info/candle-powered-heater/ with a
bolt and some flower pots. The pots hold the heat and radiate it back
out, and you get light as well. I’ve seen the homemade tops held in
place by bolting it to a decorative brick and suspending it between two
more, and the heat was produced by an alcohol or oil lamp base.

Using pipecleaners was a great variation on this, and I might add
another improvement to whatever method you’re using: if you have
aluminum foil or other reflective metallic (not mylar, I think)
material to put behind as a reflector, more of the generated heat will
to where you want it and not into the walls.

It tastes much better when you leave it overnight. To me it tastes almost like regular milk after sitting, close enough to use in cooking, baking and cereal without seeing a difference. Not sure how a glass of it would taste, though. I’ve always found powdered milk mixes better with warm water, so it’s almost necessary to leave it overnight if you do it that way.
