Home vegetable gardens appear to be booming as a result of the twin movements to eat local and pinch pennies.

At the Southeastern Flower Show in Atlanta this winter, D. Landreth Seed Co. of New Freedom, Pa., sold three to four times more seed packets than last year, says Barb Melera, president. "This is the first time I've ever heard people say, 'I can grow this more cheaply than I can buy it in the supermarket.' That's a 180-degree turn from the norm."

Roger Doiron, a gardener and fresh-food advocate from Scarborough, Maine, said he turned $85 worth of seeds into more than six months of vegetables for his family of five.

A year later, he says, the family still had "several quarts of tomato sauce, bags of mixed vegetables and ice-cube trays of pesto in the freezer; 20 heads of garlic, a five-gallon crock of sauerkraut, more homegrown hot-pepper sauce than one family could comfortably eat in a year and three sorts of squash, which we make into soups, stews and bread."

She compares the current period of market uncertainty with that of the early- to mid-20th century when the concept of victory gardens became popular.

"A lot of companies during the world wars and the Great Depression era encouraged vegetable gardening as a way of addressing layoffs, reduced wages and such," she says. "Some companies, like U.S. Steel, made gardens available at the workplace. Railroads provided easements they'd rent to employees and others for gardening."

Ingredients for Chicken Gumbo Recipe 2

* 1 chicken
* 2 slices bacon
* 1 large onion
* 1 pint okra, cut small
* 1 cup green corn
* 1 green pepper
* 1 can or 1 quart tomatoes
* 2 quarts hot water
* 1 teaspoon salt
* ¼ teaspoon pepper
* 1 bay leaf
* 1 teaspoon curry
* 1 tablespoon gumbo filee powder

Instructions

1. Cut up the chicken into serving pieces; wash and wipe it.
2. Fry the sliced onion with the bacon until only slightly brown.
3. Put this in the kettle with the chicken, pour in the water and cook until very tender, and the bones will fall out.
4. Take the chicken out and remove all the bones, skim fat, and cut the meat in small bits.
5. Strain the liquor through a coarse strainer, return the chicken, put in all the vegetables, the curry powder and bay leaf, and cook until the okra begins to “rope”; then add the gumbo filee powder.
6. Serve with plain boiled rice or rice balls.
7. ‘Note: the gumbo filee powder may be obtained in bottles at all first-class grocers’.

Ingredients for Chicken Stew with Celery and Noodles Recipe

* 2 chickens (broilers), cut in halves
* 1 stalk celery, washed, peeled, cut in large pieces
* 3 cups noodles, broken in pieces
* 2 cups water
* 1 onion, peeled, sliced
* 1 cup milk, scalded
* Seasonings to taste

Instructions

1. Combine all ingredients in a large pot and cook over low heat for 35 minutes.
2. Serve.

Note: The chicken juice is practically absorbed by the noodles, but the scalded milk absorbs part of the starch contained in the noodles, thus making a sauce of a creamy appearance.

Ingredients for Turkey With Tomato Sauce Recipe

* Several slices of cold turkey
* 1/2 can of tomatoes
* 1 bay leaf
* 1 teaspoon of sugar
* 1/4 teaspoon salt

* 1 tablespoon of butter
* 1 tablespoon of grated bread crumbs

1. Mince the cold turkey.
2. Stewing tomatoes, bay leaf, sugar, salt and curry powder for 30 minutes.
3. Strain and add meat extract, butter, and grated bread crumbs.
4. Return to the heat and stir in the turkey and mushrooms that have been cut in half.
5. When thoroughly heated, cover the tops with browned bread crumbs and serve immediately.

Ingredients for Turkey Hash With Celery Recipe

* Turkey (leftover), cooked and chopped
* Celery, washed, peeled, chopped fine
* Seasonings to taste

White sauce:

* 1 pint of milk
* 1-3 tablespoons of butter, depending on desired consistency
* 1/2 teaspoon salt
* 1, 2, or 4 tablespoons of flour, depending on desired consistency

1. Use 1 cup of white sauce for 2 cups of turkey and celery mixed.

To make white sauce:

1. Scald milk.
2. Melt butter in a saucepan. Add salt and flour and let cook for one minute, stirring constantly.
3. Add the milk little by little, stirring gently until it boils. Let it boil for 3 minutes.

1. When the white sauce is boiling, add the chopped celery and turkey.
2. Let cook for 3 to 4 minutes, add the seasonings, and serve.

Ingredients for Pork And Beets Stew Recipe

Ingredients for Ragout Of Vegetables With Noodles Recipe

* 1 ½ cups carrot
* 1 ½ cups young turnip
* 3 cups raw potatoes (measured after being cut into slender pieces)

1. Braise carrot, turnip, and onion in a well-oiled pan in a hot oven or in a hot skillet.
2. Place braised vegetables in a saucepan with potato, tomato, and broth.
3. Salt to taste and bring to a boil.
4. Brown the flour in the vegetable fat and add a sprinkle of savory. Add some of the liquid from the vegetables and stir smooth.
5. Add more of the liquid and pour it over the boiling vegetables.
6. Let boil gently undercover until well done and the gravy is reduced to a nice consistency.
7. Serve with plainly seasoned noodles.

It can also be obtained in almost any woodland east of the Rockies... it's just dried ground up sassafras leaves. Powdered sassafras, or file' isn't just seasoning- it's a useful thickener for stews and soups that unlike corn starch doesn't have to be added to cold liquid, and unlike flour doesn't require much cooking to work. Sassafras is a common tree, very fragrant, fairly unique since it bears three kinds of leaves on one tree.

Thank you for sharing it with us. I am glad you were reading the thread and caught it.

Years ago, I would buy and drink the sassafras tea, it was considered a tonic for what ailed you, but what I bought was the shaved roots pieces, as I recall.

Ingredients for Rye Biscuit Recipe

* 1 cup boiling water
* 1 cup rye flakes

Ingredients for Butterscotch Bread Squares Recipe

* 2 cups bread flour
* ¼ cup cornstarch
* 1 teaspoon salt
* 4 teaspoons
baking powder
* ¼ cup corn oil
* 1-¼ cups milk
* 1 cup corn syrup
* 1/3 cup chopped nut meats

2. Stir in the corn oil and milk.
3. Oil a medium-sized dripping pan with corn oil and pour in a layer of the mixture, about 1/2-inch thick.
4. Bake at 375 degrees F.
5. Boil the remaining corn syrup untol it forms a thread. Stir until creamy.
6. When the baking is almost finished, spread the corn syrup on top.
7. Sprinkle with chopped nut meats and finish baking.

The Glory of Granita

For my birthday, I was given an ice cream maker...the fun of making ice creams and sorbets is endless. But before I had this fun little toy, I fought the summer heat using a Sicilian treat that is as easy to make as it is delicious: granita.

Granita means grainy and it looks like a course, grainy ice. At least, that’s the way it looks when it is made in Palermo, where my family comes from. When made on the eastern side of the island, around Syracuse, it has a creamier texture. The smoother texture comes from the use of a gelato machine. But when I learned how to make my coffee granita recipes, no one in the neighborhood had an ice cream machine. But we did have a refrigerator and, really, that’s all the machine you need.

Not Just Coffee Granita recipes

In New York, summer brings with it three inevitable things: heat, humidity, and lemon ice. In Italian neighborhoods, lemon ice was a generic term for any Italian style ice. I am partial to orange granita as a general dessert for all guests and save my coffee granita recipes for my guests who don’t mind a dose of caffeine with their desserts.

The tools you will need to make granita are a 9x9 Pyrex pan or a pan of comparable size that can take a bit of scraping. Do not use a non-stick coated pan. Don’t. You will be scraping the pan with a fork. A metal non-coated pan will work as well, but I have gotten the best results from Pyrex. You will also need a fork, something to juice an orange, and a zester.

Now let’s get going:

Orange Granita

* 4 large oranges
* 1 large Meyer lemon
* 2/3 cup of sugar
* 2 cups water

1. Zest the lemon and oranges with the zester so you have thin strips.
2. Juice the oranges and lemon.
3. Put the sugar and water in a sauce pan over low heat until the sugar dissolves.
4. Once the sugar is completely dissolved, put the zests into the liquid and bring to a boil.
5. Let this boil for ten minutes.
6. Remove from heat and strain into a bowl. Save the zests.
7. Add the juice and mix well.
8. Pour into the 9x9 pan and place uncovered into your freezer.
9. After about an hour, scrape the frozen chunks with a fork and mix them into the liquid (which should be kind of slush like).
10. Keep checking and scraping about every 30 minutes.
11. After about 2 1/2 hours, it is ready to serve.
12. Garnish with the candied zests.

Coffee Granita

* 1 1/2 cups of strong espresso
* 2 tablespoons sugar

1. Mix the sugar into the espresso.
2. Pour into the 9x9 pan.
3. Follow the instructions above for orange granita.

I like to serve my coffee granita with a splash of Anisette and a bit of whipped cream.

Ingredients for Bread And Butter Fritters Recipe

* 4 slices bread and butter
* 1 tablespoon raspberry jam
* 1/2 ounce of sifted sugar
* Frying batter

1. Spread the jam on the bread and butter and press them well together.
2. Cut into rounds, dip in a good batter, and fry a golden brown.

3. Drain on brown paper, and sprinkle with powdered sugar.

9. 1/4 teaspoon salt
10. 2/3 cup milk
11. Mix and sift dry ingredients, add milk gradually, and egg well beaten.

Ingredients for Bran Bread (two Small Loaves) Recipe

* 1 pint lukewarm water
* 1 cake compressed yeast
* 3/4 pound sifted pastry flour (3 cups well shaken down)
* 1/2 cup oil
* 1 cup brown sugar, pressed down (6 ounces)
* 2 teaspoons salt
* 3 cups bran measured lightly (4 1/2 ounces)
* 1 cup raisins, boiled in a little water until plump, then drained

1. Dissolve the yeast cake in water.
2. Stir in the flour and beat well.
3. Set this sponge in a warm place to rise.
4. In about two hours, it should be very light and full of bubbles.
5. Beat together the sugar and oil. Add it with the salt, bran, and raisins to the light sponge.
6. Beat well together.
7. This will be a soft batter. Do not add flour or bran to make it as stiff as dough.
8. Pour batter into two oiled bread tins.
9. Allow the loaves to rise about one-eighth inch, then bake at about 400 for 45 minutes.
