Ingredients for Chicken Gumbo Recipe 2

* 1 chicken
* 2 slices bacon
* 1 large onion
* 1 pint okra, cut small
* 1 cup green corn
* 1 green pepper
* 1 can or 1 quart tomatoes
* 2 quarts hot water
* 1 teaspoon salt
* ¼ teaspoon pepper
* 1 bay leaf
* 1 teaspoon curry
* 1 tablespoon gumbo filee powder

Instructions

1. Cut up the chicken into serving pieces; wash and wipe it.
2. Fry the sliced onion with the bacon until only slightly brown.
3. Put this in the kettle with the chicken, pour in the water and cook until very tender, and the bones will fall out.
4. Take the chicken out and remove all the bones, skim fat, and cut the meat in small bits.
5. Strain the liquor through a coarse strainer, return the chicken, put in all the vegetables, the curry powder and bay leaf, and cook until the okra begins to “rope”; then add the gumbo filee powder.
6. Serve with plain boiled rice or rice balls.
7. ‘Note: the gumbo filee powder may be obtained in bottles at all first-class grocers’.

It can also be obtained in almost any woodland east of the Rockies... it's just dried ground up sassafras leaves. Powdered sassafras, or file' isn't just seasoning- it's a useful thickener for stews and soups that unlike corn starch doesn't have to be added to cold liquid, and unlike flour doesn't require much cooking to work. Sassafras is a common tree, very fragrant, fairly unique since it bears three kinds of leaves on one tree.
