Pumpkin Freeze
1 cup canned pumpkin
1/2 cup packed dark brown sugar
1/4 tsp salt
1/4 tsp ground cinnamon
1/8 tsp ground cloves
1 qt. vanilla ice cream softened
In a large bowl, combine the pumpkin, brown sugar, salt, cinnamon,and cloves.
Fold in ice cream. Fill individual molds or foil-lined muffin cups (just even and smooth with the top). Cover and freeze for 24 hours.
Have fun eating these tasty individual treats.

I have spent the past 2 years slogging through some of life's bumps in the road....
..from dad's heart attack....
... mom's alzheimers...
... moving them both to a 'home'....
... two evacuations for hurricanes last year...
... the election--(I stood on street corners waving for the month of October last year)--
.... my first granddaughter's early birth a few weeks later.. **she's fine**....
..mom's death....
... hurricanes this year
... moving dad to another place....
..you know....life!
Carbs became my friend...
.. But carb & I parted ways recently, and I've been taking long walks and eating healthy again!
