Sounds good...might look into the black soybeans. I've heard they're tasty! Though...I can have real beans and whole wheat tortillas.
Like I said...South Beach isn't really low carb. It's just low processed carb...or really, processed carb free, unless you count grinding grain as processing.
Speaking of grinding, I just made a bunch of almond flour! Gonna try those pancakes one of these days. I do like the flax pancakes, though, now that I've found a recipe I like. I have 'em once a week or so.

BTW, you can have jicama, right? Best I can tell, it's only five net carbs for a full cup. And it's sweet! I finally found some at a local store and tried some for lunch. Sprinkled a little cinnamon on the slices and realized it reminded me of apple...so I'm attempting a sorta mock apple crisp now, using almond flour crumbled with butter as a topping. It's in the oven now. I have a feeling it's going to turn to mush...but if it's tasty mush, I may still make that once in awhile. I'll let you know!

Jim's picking up a movie. He's gonna get Peter Pan and / or Lion King 1 1/2, I think. No one else wanted to watch ROTK. *snif*
Margaret and Stephen are gone until late tomorrow. Maybe Monday I can talk 'em into watching it with me. They're much bigger fans than Jim and Teresa.

Oh, and for future reference...at the grocery store I found sliced raw almonds - not the slivered kind, which I think are blanched. They had whole ones, too, but I figured the sliced would grind easier. It worked beautifully, so I guess that's what I'll get from now on if I wanna make some!

Soybeans aren't. Regular beans are. But they're whole foods...which is what South Beach is all about.
They also have lots of fiber and minerals.

Sigh... I'm starting to almost regret moving so far away, even before I do. It would be nice to have my sibs in a controlled enviroment... I'll have to have them come out and visit now and then.
Not that I'm reconsidering my move! I can't wait.

These soybeans are black and taste just like any other bean to me...rather bland.
8g of carbs per half a cup serving...7 of which are fiber and can be subtracted. 1 net carb.
