That was someone's bad attempt at humor via menu planning. Totally unprofessional and reason for demotion or alternate placement at the very least. There's a long history of food stereotyping along racial types.

Just as with the word “gorilla” (or even “guerrilla”), when people consumed with race (i.e., Democrat/Communist racists) hear “fried chicken” — especially in conjunction with “watermelon” — they immediately think “black” … or, in the parlance of the Left “person of color” (i.e., “colored person”).
