You’ll like them the anejo is sharp and aged, the menonita is a soft farm cheese thats really ooey gooey, it out does mozzerella in some regards.
It melts in a blink but it has more structure than mozzarella IMHO

BTW, Mexican Mozzarella is the same as Italian Mozzarella and its half the price.
Plus the cows tend to be grass fed.

Oscypek is the best cheese of all! It is made by the Polish and Slovak mountain folks of the Tatra mountains from sheep's milk (and cow's to increase production and tell dumb tourists it's from sheep's milk.) It is made using century old methods which didn't find approval among the EU bureaucrats who tried to kill its production. Some kind of compromises was worked out. I think you can buy it stateside in Polish and Slovak communities of Chicago and new York
