Labor Day Weekend BBQ (mmm...BBQ..mmmm)

Hey, Hey, listen up. I've got 26 lbs of pork shoulders in the smoker right now and will be up 1/2 the night tonight, but its worth it to be able to sit back and munch on some good ole' smoke pig and talk politics with the kids tomorrow.

Who has what on the grill and how's the cooking?

I was going to clean up my house for company tomorrow. But, why should I if they're only going to clutter it up?

I haven't shopped yet for vitt'lins. My party will be a small one. We're going to drink beer, eat meat, and play poker. We might even watch that UK vs UofL football game.

Going to my wife's homeplace for a picnic tonight. Then tomorrow, them Hokies whoop up on them Golden Knights. And Monday, what else? I labor. I'm not taking no commie holiday.

Brisket, coleslaw, & potatoes.

Plus navy bean soup and a couple of chickens to ward off starvation until the beef is done.

1 1/2 teaspoons onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 teaspoon black pepper
1 1/2 tablespoons paprika
2 teaspoons cumin
1 1/2 tablespoons chili powder
1 tablespoon hot pepper sauce
3 tablespoons worcestershire sauce
2 tablespoons liquid smoke flavoring 
3/4 cup corn syrup, dark
1 1/2 cups tomato sauce
1 cup catsup
1 cup white vinegar 
1 cup brown sugar -- packed

Mix well. Refridgerate overnite.
Apply during last minutes of grilling as a finishing sauce.

Approx 2 quart of sauce.

Just make sure the sauce has no tomatos or onions in it. Creamy cole slaw, white buns sorta soakin with juice, iced tea with a bit o'sweet but no effin lemon, warm angel food cake for desert. MMMMMMMMMMMMMM!!

I just finished roasting a chicken, making a skillet of southern cornbread, and steamed some fresh green beans.

Life is good! Now all I need is some good brew...

Well I don't have any barbeque on the menu for this weekend but I do intend to grill some salmon filets. It's a whole different league from BBQ but enjoyable none the less.

I marinate the filets, flesh side down, on a platter in a mix of crushed chopped garlic, red wine, olive oil and fresh basil. Specific amounts of each can be adjusted to taste but it is critical that you use as much fresh crushed, garlic as you can get ahold of and fit onto the platter.;-) Marinate for at least an hour.

Grill them on a hot grill for 3-1/2 minutes per side, flesh side first

Corn on the cob, fresh sliced tomatoes in olive oil and shredded regianno parmigian and cold, cold beer all go well with it.

Put some of this sauce on it. It's my favorite.


Yadkin County (NC) Homemakers Extension Club Cookbook Version

Western North Carolina BBQ Sauce
1-1/2 cups cider vinegar
1/2 cup water
1/2 cup catsup
1 teaspoon salt
1 chopped onion
2 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1/8 teaspoons red pepper

Preparation: Mix all ingredients in a saucepan and boil slowly for 15 minutes.

Sounds good!

We're having tropical storm/hurricane watches served up to us on the Gulf Coast for Labor Day Weekend.

Might eat some delicious (sarcasm) stadium food tomorrow at Enron...I mean Astros...errr...Minute Maid Park if the evil storms stay away.
