3 Black grouper fillets (7 oz.)
1-1/2 tbsp. Olive oil
2 Ripe avocados, med. dice
2 Ripe mangos, med. dice
1 Red tomato, small dice
1 Yellow tomato, small dice
1 Small red onion, small dice
1 Orange bell pepper, seeded, small dice
1 bunch Cilantro, chopped fine
13 slices Monterey Jack cheese
2 Flour tortillas
1/2 tbsp.Vegetable oil
Juice from 1 lime
Juice from 2 tangerines
In a large non-metallic mixing bowl combine the avocados, mangos, tomatoes, onion, bell pepper, cilantro, lime and tangerine juices. Refrigerate for an hour. For each of the tortillas, place the cheese slices on half of a tortilla. Fold the other half over the cheese. Cook in a sauté pan on both sides until golden brown. Season the fish well with salt and pepper. Heat the sauté pan with olive oil until slightly smoking. Sauté the fish for 3 to 5 minutes, starting with seasoned side down. Turn the fish and cook until done. The fish should be flaky all the way through. To serve, cut the grilled tortilla in half to form 2 triangles. Place the fish on top of the tortilla triangles and top with the salsa. Serves 3. NOTE: You can add a dash of cayenne pepper or finely minced jalapeno to the salsa if you like a little heat.

Well, Jeb's recipe certainly beats MY governor's, which is a walnut caramel! Anything that starts with 6 cups of sugar is not exactly what I/ looking for! LOL!

Yes, I noticed that - most governors submitted very sweet or very fattening recipes. Gov Bush's recipes is one of the few HEALTHY recipes!!! :)

Well, I looked it up. Gray Davis's recipe is Lemon Chicken. That fits: Yellow Chicken.
But! Freeper Mike Huckabee (Arkansas) has this one: Huckabee's Hot and Happy Cajun Jambalaya. Woo-eee!
