I've been quiet today because it's been a busy time ..... the first of the month we have to get out invoices and do payroll plus tying up the previous month. But I've been keeping an eye on y'all ... LOL! ..... I lurk at such times but don't have time to post.

Btw, I'd love your recipe for peach cobbler.

My folks had a nectarine tree while I was growing up. My mother figured out more ways to make desserts using nectarines than I've seen before or since!

At one time I had three peach trees in my yard - the one tree gave peaches so big you had to use both hands to eat them. Two would make a pie!

I also had a mature apricot tree which gave neither blooms nor fruit for about three years. My neighbor at the time came over and walked around it several times in one direction, and several times in the other direction. She leaned up against the tree, looked at me and said: "It needs iron." She retrieved some nails from her garage and buried them around the base of the trunk. The next year I had apricots like you wouldn't believe! It doesn't seem like summer unless I can have peaches with my cereal in the morning. :)

I love nectarines too. My grandfather used to grow the best ones, but the tree died the summer after he did. Thanks for bringing back some wonderful memories.

Just what kind of special powers does your neighbor have? ..... LOL!

In the South people grow a lot more yellow squash than zuchini (sp?) ..... but it has the same habits. If you have more than one or two plants, you're going to have people running from you screaming because they figure you're trying to pawn more squash off on them ..... LOL!

Peach Cobbler

Filling:
1/2 c Sugar
4 tsp Cornstarch
1/2 c Water or juice from peaches
4 c fresh peaches or canned peaches

Combine in saucepan sugar and cornstarch. Add water and blend well. Cook over medium heat, stirring constantly until it thickens. Add lemon juice and peaches. Turn into baking dish and add topping, below.

Topping:
1 c Flour
1/2 c Sugar
1 1/2 tsp Baking powder
1/2 tsp Salt
1/2 c Milk
1/4 c Butter or margarine, softened

2 tb Sugar
1/4 tsp Nutmeg

Preheat oven to 375 degrees F.
Topping:
Sift first 4 ingredients into mixing bowl. Add milk and butter and beat until smooth. Spoon or pour over filling in baking dish. Sprinkle with mixture of sugar and nutmeg. Bake 40 to 45 minutes. Can serve with whipped cream, ice cream or just plain. Note: My sister-in-law pours heavy cream over the cobbler serving, she grew up on a dairy farm and loves that cream.

Sounds yummy!!! But I sure can't imagine it with canned peaches! I like them but they are an entirely different food than fresh peaches.

When we lived in eastern NC, we used to have a garden and I did a lot of canning and freezing. But when we moved here, our lives changed drastically and we don't have the time for the gardening ...... and I don't even have room for a freezer in this house ..... :-(

I sure miss having all the fresh veggies and love hearing y'all talk about it. There's no better eating than veggies picked out of your garden and prepared fresh the same day!

I freeze extra peaches from my dad's tree, and use them in this recipe. In a pinch, the canned peaches will do. In the deepest darkest days of winter, canned peaches will do.

We live very near one of the biggest peach-growing areas in the whole SE United States. Even with what little bit of freezer space I have, I usually manage to freeze a few packages of peaches. I usually freeze them with some sugar already on them ..... that way, they're ready to go for recipes as soon as they thaw out.

That neighbor claimed to be psychic. I have stories about her that would keep you in stitches for hours. But she had a great love for all living things, and taught me a lot about patience and friendship.

Thanks for the recipe! It will be served with dinner one day this week-end. Of course, the main course will be Zucchini Something or Other, LOL! Grandpashy spent quite a few years in the south, and one of his favorite meals is fried yellow crook-necks and sliced tomatoes.

Going to venture out to see what's happening on some of the other threads.

I won't be here til late tomorrow ...... I've got some appointments and things to do most of the day. I just got an email, though, that I want to share so I'll go ahead and post it tonight and maybe some of you will see it besides us late night folks.
