Peach Cobbler

Filling:
1/2 c Sugar
4 tsp Cornstarch
1/2 c Water or juice from peaches
4 c fresh peaches or canned peaches

Combine in saucepan sugar and cornstarch. Add water and blend well. Cook over medium heat, stirring constantly until it thickens. Add lemon juice and peaches. Turn into baking dish and add topping, below.

Topping:
1 c Flour
1/2 c Sugar
1 1/2 tsp Baking powder
1/2 tsp Salt
1/2 c Milk
1/4 c Butter or margarine, softened

2 tb Sugar
1/4 tsp Nutmeg

Preheat oven to 375 degrees F.
Topping:
Sift first 4 ingredients into mixing bowl. Add milk and butter and beat until smooth. Spoon or pour over filling in baking dish. Sprinkle with mixture of sugar and nutmeg. Bake 40 to 45 minutes. Can serve with whipped cream, ice cream or just plain. Note: My sister-in-law pours heavy cream over the cobbler serving, she grew up on a dairy farm and loves that cream.
