Borden Dairy Co., one of America's oldest and largest dairy companies, on Monday became the second major milk producer to file for bankruptcy in the last two months.

Tumbling milk consumption combined with the rising price of milk have crippled the dairy industry with debt. Dean Foods, America's largest milk producer, filed for bankruptcy November 12.

I remember the stall at the Texas State Fair.

I recall seeing Elsie and the calf Beauregard there.

The Wal-Mart near by stopped selling Dean’s and started selling Kemp’s, which I think is an improvement. Kemp’s has good chocolate milk, and their egg nog is the best around. They still sell Dean’s French onion dip and cottage cheese though. I like the Bucky Badger French onion dip better.

I like light cream too. Just seems to be harder to find.

Just get heavy cream (about 36% fat) and cut it with milk (3.25% or less) to desired level . I used to work on a dairy farm, and that is how we used to make light cream for the soda fountain. 50 years ago.

More than $20 billion to subsidize corn, soybeans, wheat, cotton, rice, dairy and a few other products. Though I am sure if they did not subsidize farmers milk prices would be much higher, since it cost a whole lot more to produce, process, store and sell milk than most other consumable products.

“cheese consumption continues to rise and is projected to rise.”

Motzerella. Pizza.
Where I live daries have sprung up like springtime
weeds. Cheap land, plenty of water, lower taxes, feed
for the cows readily available.

There has been for over a year some sort of “Milk and Egg War” going on between Aldi and Wal Mart, just in our area, with both for the last couple months at $1.58 per gallon for store brand skim through whole milk. It was even lower B4 that, and Aldi is still at $.64 per 1/2 gal, Wal Mart at $.95, I think. Eggs dipped to $.44 / doz. for a bit, and are still $.48, I believe, at Wal Mart (haven’t checked for a few days - we have a few free range chickens so I usually don’t go by that bin) and last I looked were under $.70 / doz. at Aldi. It’s kinda weird: If Aldi drops the price, WM usually follows quickly, but on eggs Aldi went back up and WM stuck at the lower price. On milk, Aldi went back up on gallons, but stuck on 1/2 gallons, WM went back up on both sizes.

My wife occasionally sells 2-4 doz. of our eggs at get-togethers with her friends, but at $1.75 per doz., well, our chickens are mostly pets / scraps disposers / fertilizer generators: They are a losing money proposition even before counting our own labor!
