I met a guy whose family history involved the Austro-Prussian War in 1866. One side of the family left Austria to avoid military service then, and the other left Germany for the same reason. Wonder if any of the grandsons went back in WWI in the US army.

Correct. A recently deceased friend went to work on a N Dakota farm following his graduation in 1939. The farmers two sons had returned to Germany (can you say to serve the fatherland?) My friend ended up learning German as the farmer spoke no English.
Fast forward to WW2—he was infantry (draftee) but frequently used as an interpreter—was one of the first to enter Dachau. Liberated the camp commanders SS sword. On his death his wife donated it to Camp Dodge military museum.

One of my ancestors came to America only after her older brothers had skipped Germany to avoid mandatory military service and ended up coaxing the family to join them in north-central Iowa. They were Ostfrieslanders who ended up intermarrying with Noordhollanders and the resulting families retained a bunch of quirky cultural remnants, yet they self-identified as Americans from the get-go.

yes as was my ancestors name AFTER they arrived. The historical paper I thought was in Germany telling him to leave - he wouldn’t have an americanized name before leaving Germany.
