The health beef over barbecued meat

Meat on the grill is as much a part of the Fourth of July as fireworks and American flags. But it is also reputed to increase cancer risk in unsuspecting patriots, thanks in part to chemical compounds formed when meats containing muscle — including beef, pork, poultry and fish — are cooked at very high temperatures.

The class of chemicals known as heterocyclic amines, or HCAs for short, were first discovered in the 1970s by Japanese scientists, who noted that compounds in the charred parts of cooked fish and meat were capable of damaging cellular and bacterial DNA in test tube experiments.

The short argument against is that humans have been eating barbecue and breathing smoke since the taming of fire. The ones hypersensitive to the negative effects have long died, and their genes are no longer “in the pool”. NO other species has this kind of long-term exposure to the chemicals produced by fire and its by products.

My mom is ‘blind’; I truly believe because of that, she has aged differently; she does not ‘see’ what we see although she does ‘hear’ but overall she is somewhat secluded.

Thank you. It’s been around 40 years now. Back when this started (around ‘68) she went to the Mayo Clinic, NIH etc.. no one could stop the loss and wasn’t sure what caused it. Since then, her condition, called Uveitis, if caught early can be halted. It causes hemorrages/inflammation in the eye itself but now they can cauterize the various tiny veins that are rupturing and treat the inflamation with meds.

Mom was an avid horsewoman, hunter, fisher, cook etc...20/20 vision. It was devastating. She would have made a wonderful FReeper too. :)

So true. I think they are miserable and want to make others’ lives just as wretched. I, for one, will eat what I want, exercise when I can, and be happy.
