Mrs.N...((HUGS))...how ya doing? We have been unusually warm for 2 weeks now and lots of melting going on.
Pina Colada Cake
1 box of yellow cake mix.
12 ounce can Eagle Brand milk
1 can 12 ounces cream of coconut.
12 ounce carton Cool Whip
Make yellow cake as per package directions. Bake in sheet pan.
Remove from heat and punch multiple holes in it. Cool. Mix Eagle Brand milk and coconut cream. Pour over cake. Frost with Cool whip. Keep refrigerated.

guys: the ladies are stunning/beautifully dressed (even the POOR GRRLS dress well! = it's no coincidence that VZ holds the records for having the most winners in international beauty pageants!!),
the house/apartment rentals are cheap,
there is a myrid of cultural activities,
the food/drink is great &
the temperature is 85/75 in the summer & 75/65 in "the winter" (it rains for 1/2 an hour most every afternoon about 4PM).
like i said, when "the tyrant" is OUT, i'm going back to stay.

This makes a great summer sandwich spread.

8 oz cream cheese, room temp
1 cucumber peeled, seeded and diced fine
1 onion diced
1 green pepper (optional)
salt
Miracle whip
Add the first 4 to food processer ..blend.Add.Miracle whip to the desired texture is achieved. Taste and season with salt as needed.
