I got a Kroger add in the mail today. They have a whole sirloin roast for $1.99/lb...Can’t buy good hamburger for that..I may have to partake and have it sliced into steaks.

All large roasts need to set to allow the juices to settle(You knew that).
Remove the salt casing immediately after removing it from the oven! It will contiue cooking otherwise!
I like my roasts done rare-medium rare in the center, so remove it from oven when it reaches 130-135 deg.
After salt is removed, cover loosely with aliminium fool for 1/2 hour.
You can also season the roast any way you prefer, just press it on with your hands before coating with KOSHER salt.
Yum-Yum!
PS: Set roast out on counter a couple hours early to warm it slightly.
It was my router..a cable technician talked me through the searching for answers..finally had me unplug the router and plug the modem directly into my laptop. That cured the problem..I fooled around with the antennae to the router..and voila..It all is working fine again.
I learned something that might come in handy again.

I wonder if you could use the same technique with a Turkey....Don’t see any reason why you couldn’t.
My other question...The pan drippings..do they just stay in the roast?

Just get a big fat binder and use the cellophane sleeves..
You can tuck items in and slip a note in to go with it.
Scrap booking with an attitude...
Now you have my imaginary going....What about a pork roast ?
I thought maybe it would bring a memory or two....
