Anyone know how to capture streaming audio and video? Have some items I would love to save to disk but don't how and what to use to capture them.

Try Camtasia Studio - it lets you record the screen on your computer, or a part of it and save as a video file
Agreed. I use Total Recorder very heavily for audio recordings. For video you can do a search for VDownloader. It will capture YouTube videos and a few others and it is free.
It depends what kind of file. Most video files can just be saved.
If it’s an Adobe Flash file, then you can get a little freeware program that allows you to download flash files to disk, and then play them with Internet Explorer.

For audio, I downloaded and bought Super MP3 player and have never been disappointed with that program.
For Mac...
* Snapz Pro X will capture from 1 to 30fps video. You can define what portion of the screen you want to record. It records both system audio and/or the microphone input. You can resize the output and select different compression codecs. It’s $69.
* Wiretap is an audio capture tool. A shareware version is available with certain features disabled. Activating the Pro features cost ~$20.
