It took me a while, but ......

How's this?

If I'm not here when you're ready for more, I found this recipe ..

Cut the bread into shapes after toasting, using biscuit cutters, for a bit of fun. Instead of toast you could use muffins or even crumpets, but you may have to double the quantity of cinnamon-sugar and butter. Serves 4 Sugar - 2 tsp, or more according to taste Ground cinnamon - 1 tsp Bread - 4 slices, Butter - 25g (1 oz), softened METHOD Mix the sugar and cinnamon. Toast the bread gently and butter it lavishly. Sprinkle with the cinnamon sugar and put it back under the grill for 1 minute.

My wish for you, my friend. : )

Thanks, Louie.

Just when I think I've got "enough" someone comes along and dishes out another portion for me.

I'm no poet by any stretch of the imagination, but I have been know on an occasion or two to paint a few pictures from my keyboard.

Time is much more limited these days, and I could use a few extra portions of that, but in the meantime, I'll offer up contributions whenever possible.

Oh, and I will take y'all up on that coffee refill. :)

I found a recipe that looks like something we should serve this afternoon.

Paradise Loaf

This is a very moist cake. Omit the icing and serve as a pudding with fresh cream.

Makes 12 slices

Plain flour - 100g (3½ oz)
Baking powder - 1 tsp
Desiccated coconut - 50g (2 oz)
Sugar - 175g (6 oz)
Egg - 1 beaten
Milk - 150 ml (¼ pint)
Butter - 100g (3½ oz), melted
Orange - ½, zest and juice
Curd cheese - 75g (3 oz)
Orange juice - 2 tbsp
Icing sugar - 2 tsp
Tropical fruit and nut mix - 50g (2 oz)

METHOD Place the flour, baking powder, coconut, sugar, egg, milk and butter in a food processor and process for approximately 30 seconds or until smooth. Add the orange zest and juice and mix.

Pour into a greased and lined 900g (2 lb) loaf tin and bake at 180 ºC / 350 ºF / Gas 4 for 45 minutes. Cool in the tin before turning out.

Cream together the curd cheese, remaining orange juice and icing sugar and spread over the top of the loaf when cold. Then place the fruit and nut mix on top. Cut into slices to serve.
