If this is “capitalism”, then maybe I don’t like it quite as much as I used to.

Yes it is capitalism, and eventually the market will take care of this. As large franchise restaurants decline we will see a return of small owner owned and operators of dinners and cafes.

As a Conservative, I have spent most of my life supporting free markets and “capitalism”. Adam Smith recognized that people pursue their own enlightened self-interest. However, in the modern world, it seems like every business is completely focused on squeezing every last dollar of profit out of their customers

I've gotta say I agree with you and it's not just restaurants, it's everything. The Harvard MBA school of thinking has so permeated our culture that there is no place where businesses don't cut to the bone to try and milk every last penny out of the consumer. I'm sick of understaffed businesses because they don't want to hire workers. Sick of everything being made in China because they don't want to pay Americans to make it. Sick of every restaurant serving garbage processed food. I'm sick of everyone trying to swindle me on a daily basis. Nobody wants to offer a decent product for a fair price any more, they just want to grab as much as they can and get rich quick. Something's gotta give.

My niece’s school district in Oregon seems to still be serving Mrs. Obama’s menu. It is bad. My niece won’t eat most of it.

Two summers ago they were offering pre-packaged foods that needed refrigeration and cooking at home. It was the same slop served at school. I tried each menu item. The portions were small, and they did not taste good. Since my niece won’t eat it, I had them cancel her deliveries.

We went out to eat in 2010 at a local chain restaurant and one plate came out with the food still in the bag!!!!!!!

The waitress didn't even look at the food before she brought it out.!

Labor changes: fast-food jobs increasingly filled by adults with high rates of substance abuse rather than motivated teens; migrant labor and low standards keep wages down and quality low.

somebody was high in that kitchen 15 years ago!!!!

Maybe capitalism requires a robust, healthy culture to civilize it and tame its killer instincts by imposing accountability. Maybe capitalism is playing its natural role but the culture isn’t keeping it in its harness.

My parents never went to restaurants (except for one Polish banquet place with a restaurant included) because, as my mother worded it, "God knows what kind of creatures work in that kitchen!" (That's the polite version)

Sounds like a prediction of what has happened in this country over the last 50 years or so. My kids were in the last generation of high-school kids who could find part-time jobs in restaurants, or just about any local business. Now it seems like you need to be able to speak several languages just to get help in any store. There's no "Press 1 for English" button for local customer service.

Everything in America is being bifurcated - because of our debt-based, fiat money supply

If you are prepared to pay $250 per person, you can go to a nice restaurant where a chef and his small team make Michelin quality food from scratch, sourced from local ingredients.

If not, then go to one of the many “fast casual” restaurants, which, as the author points out - are owned by private equity, use generic, mass-produced ingredients, and much of your meal is prepared or pre-frozen elsewhere, just waiting for the prep cook to add some final touches.

The only Shake Shack near us is beyond TSA at the airport, and only one terminal. So I don’t really have an opportunity to go there, though my husband was fortunate enough to get to eat there when he was heading out for a business trip.

However, yesterday as we were traveling, a fellow traveler walked by with a Shake Shake bag that smelled soooo good! We didn’t have enough time before our next flight to get any. Maybe on the return trip? ;)

literally everything in our society is being shaped by our printed, fiat, debt-based, centrally-issued currency.

Look up that, and Cantillon Effects.

Its not "capitalism" - its centrally planned money, crony-statist-political-capitalism

Interesting about “motivated teens.” In & Out Burgers Chick-Fil-A both hire the very best and nicest teen workers. It’s always a pleasure dealing with them.

We do not eat out that much—but one way to avoid the chains is “hole in the wall” small local restaurants.

Most communities have them—some are better than others—but if you can find one you like that is they way to go for good food at a reasonable price.
