Not wasted at my house
Stop breathing! Less CO2 expelled into the atmosphere!
By the time we get around to turkey soup, the other leftovers are gone. All we end up throwing out are the turkey bones. I suppose I could dry the bones and grind them for the garden, but I don’t bother.
One way or another, where do they think the food is going to go? Have they never heard of ‘leftovers’? Even if the food is not entire consumed, it is ALREADY PRODUCED. It has to go somewhere, regardless of Thanksgiving.
Leftovers are the best part of the Thanksgiving feast.
If they followed your suggestion, they wouldn’t have to worry about leftovers, and the rest of us would enjoy our leftovers in peace.

Further, the #1 health issues facing whom they inexplicably call “food insecure” people are overweight, metabolic syndrome, chronic insulin sensitivity, obesity, morbid obesity, and full blown Type II Diabetes. Just pathetic. Food should not be wasted, nobody would argue that but the issue here is this entire argument is just nonsense on stilts.
Then ALL leftovers must be harming the planet. I eat leftovers 3 times a week. I feel so dirty.

They've already attacked the summer family barbeque on July 4th, so now their going after the oldest foundational and patriotic holiday, Thanksgiving.

Bah. Cooking too much is part of the tradition. Also, we are mostly not allowed to give leftovers to "food-insecure people".
My county forbids even restaurants giving uneaten food to shelters and "soup kitchens". The restaurant must prepare food specifically for donation. Mandated waste.
Turkey pot pie is my favorite leftover.
Try stuffing waffles. Just add an egg to hold things together.
The should be beaten until converted and packed off to a convent where they can repent for the rest of their lives.
