The first apple pie recipe printed was in England in 1381. The list of ingredients included good apples, good spices, figs, raisins, pears, saffron, and coffyn (a type of pastry crust).
While the apple pie existed well before the Pilgrims landed on the eastern shores of what is now The United States, Americans wax poetic about how American apple pie is. The phrase "as American as apple pie" has been around for more than 100 years.

No Apple Pie around here until the Fall. The pies I had in the freezer from last season have magically disappeared. ;)
The apple trees are just finishing up blooming. No late freeze, so we should have a big harvest. Same with Cherries, Peach and Pears. I’ll be busy in the Fall! :)

Mrs. Big Truck makes the absolute best apple pie. I make a mean homemade vanilla ice cream. They go together like ....apple pie and ice cream!! 🙂

Apple Pie Cookies / taste just like pie
Ingredients 3 Tb butter 2 apples, peeled and diced 1/2 cup packed light br/sugar Juiced 1/2 lemon 2 Tb apple juice or cider (or use water) 1 Tbsp. cornstarch 14-oz pkg refrigerated pie dough 1/2 cup powdered sugar 2-3 tsp h/cream 1/8 tsp cardamom (option)
Directions melt butter on med-high' soften apples, 3-4 min. Stir in brown sugar, lemon juice, simmer til liquid is starting to reduce, 3-4 more min. Add whisk together the apple juice and cornstarch. Cook/stir/thicken a min. Cool offheat.
Roll out 1 piece pie dough into 12-inch round. Using a 3-inch cutter, cut out 12 small rounds and arrange on parchmented b/sheet. Re-roll scraps and cut 2 more rounds. Roll 2nd dough into 12-inch round. Cut into 1/2" strips. Cut strips into shorter 3 1/2-4-inch pieces (makes about 56 pieces).
Arrange rounds on the baking sheet. Place 1 tbl apple mixture in centers. Lattice top w/ 2 parallel strips of dough on top, then lay 2 more strips perpendicular to the first. (Alternatively, weave the strips into a lattice.) Trim the edges of the strips, then press around the edges with a fork to seal. Bake golden, 18-20 min. Remove to rack to cool. Glaze. For the glaze: In a small bowl, whisk together the powdered sugar, heavy cream, and cardamom. Drizzle over the cookies.
