NATIONAL CREAM-FILLED CHOCOLATES DAY

Chocolate lovers rejoice as February 14th is National Cream-Filled Chocolates Day! On the same day, approximately 58 million pounds of chocolate will be purchased. Much of it will be in heart-shaped boxes, filled with bite-sized chocolates with ooey, gooey centers. Quite a few of these cream-filled goodies will be exchanged and shared on Valentine's Day.

Chocolate makers offer a wide variety of cream-filled goodness, too. Take your pick from marshmallow cream, chocolate, vanilla, strawberry, coconut, hazelnut creme, and even creme de menthe. How about coffee cream-filled chocolates? Nearly every fruit you can imagine can be made into some sort of creamy center.

What's inside those hard chocolate shells? Well, many chocolate makers provide a map so you don't accidentally eat one that doesn't sit well with you. One way to completely avoid the mystery is to create your own gift box with the flavors you select. Some chocolate makers offer this option. Not only do you select the chocolates your love likes best, but it's a personalized gift, too. How chocolatey sweet is that? It's also a terrific way to avoid biting into a flavor that will ruin the evening.

Another way to make cream-filled chocolates extra special is by making your own.

No matter how you celebrate, be sure you bite into a cream-filled chocolate or two that you like!

HOW TO OBSERVE CREAM FILLED CHOCOLATES DAY

Sample a few of your favorite cream-filled chocolates and give a few, too. They can even be in a heart-shaped box if you like.

Host a cream-filled chocolate sampling party. Invite friends to make one of their favorites to bring and everyone will get to sample. Supply fruit and sparkling wine to complement the chocolates.

Take your party a notch further. Test your sampling skills by seeing who can identify the most cream-filled mystery chocolate flavors. Varieties can range from sweet to savory. We're thinking a little bacon flavor here, a little coffee there.

Try your hand at making your own cream-filled chocolates. While we often give chocolate as a romantic gesture, why not make it together instead. Turn up the heat in the kitchen and melt each others' hearts while you melt some chocolate.

Chocolate Filled Cream Puffs
A chocolate cream variation that is super easy and deelish.

Ing Cream Puffs ¾ cup flour 2 tbl sugar 2 tbl plain cocoa powder ½ cup unsalted butter 1 cup water 4 eggs Chocolate Cream Filling 5.9 oz pkg instant chocolate pudding mix 1 ½ cups cold 2% milk 1 cup sour cream 12 tsp Powdered sugar

Steps Cream Puffs Combine flour, sugar, cocoa powder. Set aside. Melt butter on med. Add water; bring to a rolling boil. Pour in flour mixture; stir til dough starts to come together; will become a ball, but keep stirring over heat a minute. Transfer dough to bowl; beat dough 2-3 min to cool slightly. Add eggs singly as you beat. (will become creamy and smooth.) Bake tbl scoops onto parchmented b/sheet spacing an inch apart 375 deg 20 min. Remove to cool completely on wire rack.

Chocolate Cream Filling Whisk pudding mix and milk til thickened and smooth, about 2 min. Whisk in the sour cream until completely incorporated. Saran and place in the refrigerator for 1 hour.

Assembly Halve puffs. Pipe in filling to bottom half, then add top half; dust w/ conf.

Lemon White Chocolate Cream Filled Truffles
Using Ghiradelli brand white and dark chocolates is a must.

Ing 12 oz white/choc 6 oz 60% Cacao Dk/Choc tbl lemon zest 1/2 c h/cream tsp fresh lemon juice

Instructions Add white chocolate broken into small pieces to bowl with lemon zest. Reserve. Over med-low, gently simmer h/cream til hot. Do not boil! Pour heated cream over white chocolate & lemon zest. Set 3 min. Mix w/ rubber spatula. If there are lumps of unmelted chocolate, micro in 30 sec increments at 50% power, stirring after each. Heat til smooth. Stir in lemon juice completely. Allow bowl to come to room temp, then saran; freezer for 2 hours (or longer). W/ small cookie scoop or small spoon, portion out 1.5 teaspoon portion of chocolate. Gently roll into sphere. Place on parchmented cookie sheet; place the cookie sheet back into freezer 30-60 min, to set.

After at least 30 min in chiller, you can prepare dark chocolate coating. Break dark chocolate into small pieces and place into metal bowl. Simmer 2" water over med heat. When simmering, but not yet boiling, set metal bowl over pot to make double boiler. Stir dark chocolate w/ rubber spatula til completely smooth and melted. Continue to heat, stirring, 3 more min. Remove bowl from pot to counter, cool slightly.

Use fork for dipping; a chopstick is helpful for scooting the truffle off the fork after dipping. Retrieve the truffles from the freezer. Take one truffle and gently roll in the melted dark chocolate. Working quickly, using the fork, lift the truffle from the dark chocolate and gently shake the excess off the candy. Next, transfer to second parchmented baking sheet. Repeat with each truffle. If the dark chocolate cools too much and stops being glossy, return the bowl to the double boiler and very quickly (only for about 10 seconds) heat the chocolate again. Fridge 30 min. Keep refrigerated until right before serving; If truffles have a little pool/foot of chocolate at the base, simply break off w/ your fingers.

Fannie Mae Milk Chocolate, Vanilla Buttercreams Center (still available from Amazon). To this day I remember the stomach ache from attempting to eat an entire 1 pound box of them in high school. Rarely had one after that. But loved them once.
