The MONTHLY Gardening Thread is a gathering of folks that love soil, seeds and plants of all kinds. From complete newbies that are looking to start that first potted plant, to gardeners with some acreage, to Master Gardener level and beyond, we would love to hear from you.

If you have specific question about a plant/problem you are having, please remember to state the Growing Zone where you are located.

This thread is a non-political respite. No matter what, you won’t be flamed, and the only dumb question is the one that isn’t asked.

It is impossible to hijack the Gardening Thread. Planting, Harvest to Table Recipes, Preserving, Good Living - there is no telling where it will go - and that is part of the fun and interest. I think I'm late on starting geraniums. Petunias, too. But I'm out of seed starter mix. Put in an HD order for 4 cu ft. of vermiculite and 2 cu. ft. perlite and a coir block.

Waiting here in OK for Armageddon (a/k/a winter’s latest, scariest “Arctic Blast”), and preparing as well as I can. The jungle of rosemary is covered by tarps, which is the only thing big enough that I had on hand. Hopefully, when the single-digit and sub-zero temps subside (just a few days if the forecast is accurate), it’ll still be alive when I lift the tarps to let them have some sunlight before covering them again for the overnight.

We’re getting our ‘Arctic Blast’ this upcoming week. I am putting off all trips to town if possible until next Friday when we get back into the teens and 20’s.

-3 tonight and then worse coming. Ugh. But it’ll be ‘too cold to snow’ so there’s that! :)

No snow here, just rain today. To keep things from getting too boring around here, flooding & high winds are the forecast for tomorrow. We may get a big snowstorm the 19th & 20th.

This past week, snow came in Wednesday around noon, then we got freezing rain overnight. There was another shot of freezing rain Wednesday, then regular rain before dawn Thursday. The sun came out Thursday & the temp made it to 59° .... I would say 95% of the snow was gone after that.

Wednesday evening I came down with whatever bug mom got the week before. Head congestion, coughing, sneezing, & feeling run down. I did a Vitamin D Hammer (50,000IU) on Thursday & slept most of the day Friday. I definitely feel better today, but still have the cough (& sore ribs) plus I keep a roll of toilet paper handy for the sneezes & nose faucet. We had to pick a poem to memorize & recite in front of the class in the 5th grade - I picked this favorite of mine & it came to mind today since I have the ‘sneezles & wheezles’ (except I am not trying to amuse anybody)!

My goodness! Great job of memorizing!

Glad the Vitamin D worked! There is something going around I do not know if its seasonal flu or some Chinese Bioweapon. (Or our own virus turned against us.)

What I have is not flu - no aches or fever, just head cold, coughing, & feeling punk/tired. Mom had the same thing except hers started with a sore throat - glad I skipped that part!

*** Last but not least, Beau passed his Stress Tests with flying colors. The Doc is certain he has no blockages based upon the test results and the x-rays they took. His heart is functioning as well as anyone who is 65 years old. So, BIG RELIEF that we don’t have to deal with any age-related issues...YET, anyway!***

Spinach Quiche / can do ahead
Uses 4 pricey eggs to feed 6.

Ing 14 oz box refrigerated pie crust 2 Tbl butter 1 ea small yellow onion, red bell pepper, both chp 2 chp gar/cloves, 4 lge eggs 1 1/4 c half-n-half 1/2 c sour cream salt/pepper Pinch nutmeg 10-oz pkg frozen chp spinach, thawed/squeezed dry 1 cup shredded sharp cheddar 1/4 cup fine-shredded parm

Filling: Cook/Stir/soften on med, melted butter, onion, pepper 10 min. Add garlic, cook/stir 2 min til fragrant. Set offheat. Whisk eggs, half-n-half, sour cream, s/p, nutmeg. Stir in squeezed dry spinach, cheddar, parm, onions/peppers. Pour into crust.

Place on preheated baking sheet; bake til puffed in center, just set, crust is golden, 40-50 min. Transfer to wire rack to cool. Serve warm or at room temp.......or fridge and serve next day.

Kitchen tip:

“Stretching eggs” for breakfast means adding a small amount of water,
milk, or fine-chopped vegetables when scrambling or cooking them.

Making eggs go further without altering the taste, allows you to feed more people
with fewer eggs; done by whisking thoroughly w/ added liquid to create a fluffier texture.

Key points about stretching eggs:

The most common method is to add a small amount of milk or water while whisking the eggs.

Fine-chp vegetables like onions, peppers, or mushrooms can be added to bulk up egg mixture.

A low heat and stirring helps cook eggs evenly and prevent them from becoming rubbery.

My mom had 8 mouths to feed, so I grew up watching her stretch eggs every time she used them for scrambling or such, so that’s how I’ve always done it. As you said in your tip, cooking them on a lower heat (I use medium low) helps them not get rubbery.

I took an Emergen-C this morning - was around a lot of germy people that I don’t often see, last night. ;)

Yummy! I make a Crustless Quiche recipe that I got from Rocking Horse Manor, a B&B in Texas.

It’s very forgiving and you can put just about anything you want in it. Yesterday I added bacon and broccoli. I like a combo of Swiss and Cheddar for the cheeses. :)
