Duck fat is markedly better for tortillas and, contrary to this article, much richer in Omega 3s. It’s also the original method in the Americas. Duck fat and corn.

Pork fat is a genuine pain in the ass to clean up. I go through more dish soap, scouring pad/sponges and hot water that way, but I try not to let it stop me from enjoying the occasional pulled pork sandwich or homemade bacon bits.

You cannot find lard in the grocery stores. I have seen a small tub of bacon grease selling for $8, but that’s it. Shortening, they have, but no lard or tallow.

I buy lard at the local Mennonite store in NY when in those parts. It keeps forever.
We gave up on any hydrogenated vegetable oil very early on in our marriage, (almost 40 years ago). We figured that butter and lard, for the few times we need it, was real food and our bodies knew what to do with it.
The other luxury item we indulge in is real maple syrup. We don’t use a lot of it so the expense is not a problem and it’s not HFCS.
To be fair...the best fried potatoes are done with duck fat.
Which Muslim countries ban pork?
Many of the Islamic populated/ruling countries ban the import and consumption of pork meat. Examples are : * Iran * Mauritania * Oman * Qatar * Saudi Arabia * Algeria * Turkemenistan * Uzbekistan * Tajikistan * Yemen * Somalia * Sudan * Afghanistan * Kuwait * Mali * Libya * Pakistan and many more.

we don’t eat dead pigs in this house or use lard, though we do eat almost anything else dead and love sushi, which is mostly dead or just got dead. a few years ago we purchased a quarter share of beef and asked for the bones and the fat too. amazing how much beef there is in 1/4 of a cow! more amazing is he gave us ALL of the bones and the fat for the whole cow. a storage nightmare but luckily I’m good at canning (a man CAN can) so we got busy canning bone broth and triple filtered tallow. 4 days later we counted up 10 gallons of broth in quart jars and 9 gallons of absolutely pure white tallow. no matter what anyone else says about tallow storage, if it’s clean and canned properly it will keep for years in a dark pantry. our “secret” is simply render and filter, render and filter,render and filter. second only to lard in good value apparently. chow.

Duck lard = $1.50/ounce
Hog lard = $.50/ounce
... in round numbers.
Here in the South we have lotsa hogs, not so many ducks ;-)
