We aren’t new to the question of “What does goose taste like?” in the poultry community, especially when most of the world eats chicken.
Contrary to popular beliefs, goose is popular in different parts of the world.
According to GQ, Roast Goose is a daily dinnertime centerpiece in places such as Turkey, Germany, Hong Kong, China, and parts of France like Alsace.

The best tasting food I have ever eaten is duck gumbo, down in south Louisiana by Cajuns Never tried goose gumbo, if there is such a thing.
If there is any Cajun who reads this, I’m sure you know of duck gumbo, but what about if it is gumbo made with goose?
always been dark meat chicken and turkey eater... I’ve had duck several times and IMHO, compared to chicken and turkey, duck was heavier and more rich because of the lean fat in the meat.
I could of chosen other words to describe it, but didnt think i would offend anyone over a duck...

Domestic goose tastes like beef (sort of). It gets a bit gamey the second day, so I make fried rice or pancit with it.
Geese are mean and dangerous. They can hit you like a hammer. Kids can be seriously hurt by them. Never turn your back to wild geese that have decided not to migrate and instead camp on a pond/yard. They also leave biohazard level waste around. I would cleanse them if they were on my property.
A couple of weeks ago, my neighbor cooked up some duck he shot, cooked them on his grill and brought some over for me to try, marinated in teriyaki sauce and wrapped in bacon, it was better than what I had prepared, but still not good enough to make me want to harvest them again, just something about the texture and slight tang. Right now I’m looking at a couple of hundred Canadian Geese on a half frozen lake and mulling over whether or not I should give it a try.
Peking Duck properly prepared is about as delicious as food gets.
Canada goose gets rubbery. You have to slow cook it.

Try smoking it instead. Smoked Woodduck breast is my favorite.
Geese taste like the herbicides and fungicides that landscapers spray on the corporate lawns the geese infest.
Those herbicides and fungicides usually use an oil as a dispersal agent and surfactant (to dilute evenly as designed and to remain in the sprayed area to take effect, instead of rinsing away).
Domestic goose is greasy, need to roast it in a drip pan or something similar, and it’s very much like duck. Wild goose, on the other hand is very lean, and the really only meaty parts are the breast. Wrap a strip of bacon around the breast, then roast. Very good, if you like duck.
I may try that next year, the season closed in my zone a few days ago.

Same here. The roasting pan was topped off with grease. I recall it was good eating but my mom filled several jars with goose fat that my dad took to the dump.
Goose sucks... Daughter raised some, not a good tast, neither were her duckse. Her chickens and turkeys tasted fine.
