NATIONAL STUFFING DAY
November 21st is an ideal day for National Stuffing Day with Thanksgiving right around the corner. Since we are already thinking about the delicious turkey stuffing that is a traditional part of Thanksgiving dinner.
Some cooks choose to stuff the bird with crusts of bread, vegetables, herbs, and spices. Others prefer to prepare a similar dish alongside the turkey using the drippings to moisten the dish. Either way, each preparation is a personal preference or family tradition. The difference is the first is called a stuffing, but the latter is referred to as a dressing.
The usual turkey stuffing consists of bread cubes or crumbs combined with onions, celery, salt, and pepper. Further spices and herbs such as summer savory, sage, or poultry seasoning add flavor and variety. Other recipes add sausage, hamburger, tofu, oysters, egg, rice, apple, raisins, or other dried fruits.
The first known documented stuffing recipes appeared in the Roman cookbook, Apicius “De Re Coquinaria.” Most of the stuffing recipes in this cookbook included vegetables, herbs and spices, nuts, and spelt (an old cereal). Some recipes also included chopped liver and other organ meat.
In addition to stuffing the body cavity of poultry and fish, various cuts of meat are often stuffed once deboned and creating a pouch or cutting a slit in them. A few examples of other meats frequently stuffed include pork chops, meatloaf, meatballs, chicken breast, lamb chops, and beef tenderloin.
Stuffing isn't limited to the butcher block. Vegetables are excellent containers for stuffing. Peppers, tomatoes, zucchini, and cabbage are just a few of the shapely veggies that make stuffing a fabulous part of your meals.

A. Stale white bread is the best bread to make stuffing. Its fluffy porousness absorbs all the unctuous juices and savory herbs producing a stuffing that allows the ingredients to meld for outstanding flavor.
Q. Why does the bread need to be stale or dry?
A. Dry bread absorbs more flavor and holds up better when the juices are added. Fresh bread will turn to mush when the wet ingredients are added.
Q. How can I quickly dry my bread to make stuffing?
A. If you forgot to dry the bread a few days before making homemade stuffing, don't fret. There are a couple of ways to get that bread ready.
First, cube the bread so more surface area is exposed to the air.
Overnight:
Place bread cubes in a basket or on a baking sheet and cover with paper towels or cheesecloth. Place in a warm area and leave out overnight.
Oven method:
Heat oven to 250°F and place baking sheet in the oven uncovered. Bake for 30-45 minutes.

Stuffing is one of my favorite foods. It should be noted that some people (e.g. my grandmother) used a sausage-based stuffing. But it is all good.
It should be cooked inside the bird. This is one of the few instances where the southerners get it wrong.
Inside the bird, it’s ‘stuffing’
Outside the bird, it’s ‘dressing’.............
Mayor Pete was rather despondent when he found out that in this case stuffing meant food.
Also, next week is the one day of the year in which my dad makes his amazing stuffing/bread sludge for Thanksgiving, very much looking forward to it.

I am a cook. My kitchen is my lab and my playground. A few recipes are staples but I prefer exploring.
All that said . ..
The hands down most best stuffing I ever prepared was made out of homemade Texas Roadhouse Rolls.
Simple recipe, basic, homemade chicken stock.
I’ll find the recipe and post it later because I want everyone to eat delicious stuffing.

That box of salt is a disgrace to all Thanksgiving tables.
When our daughter was 9 years old, I was in bed for weeks and sicker than any dog has been. She decided she’d make Thanksgiving from scratch and no cookbook all on her own. She followed the unwritten timeline by making the pies and cornbread for the dressing the day before. Got the bird in the oven on T-day at 7 am. Got the giblet gravy and hard boiled eggs going on the back burner. Got the sides prepped and rolls rising. Yes, she’d been using a real kitchen knife since slicing cucumbers for pickles at age 3 without so much as a nick (unlike her mama). Thankfully, she had Mr. b take the hot turkey out of the oven for her. The only other help she needed was asking me how much sage went in the dressing and all I could mumble was more than she thought. 12 noon and everything was perfect!

The other WM I often shop is like $2.88 for the same bundle. I think the last time I got that deal it was around $1.62.”
Just checked and those WM eggs are $11.67. Biden must be using common core math to get his 3% inflation.
Our stuffing days are Thanksgiving, Christmas, the Nativity Feast period, and any other times we have leftover stuffing-makings!

Red Badger’s Giblet Gravy Recipe

Ingredients:
1 pkg giblets from your turkey
1 tub pkg chicken livers
1/2 lb chicken gizzards
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 cubes chicken bouillon
2-3 stalks celery minced
1 medium yellow onion minced
1 quart water
2 (14.5 ounce) cans chicken broth
6 hard-cooked boiled eggs
2 tablespoons cornstarch
1/2 cup milk

Directions:
In a 2 quart or larger pot, simmer the giblets, livers, and gizzards, salt, pepper, bouillon, celery and onion in 1 quart of water for 40 to 50 minutes. If you have a pressure cooker it’s half that time.
Drain liquid, and reserve in pot. Put onions and celery back into pot, simmer while doing the rest.
Chop turkey and chicken livers, mince turkey and chicken gizzards and strip and chop neck neck meat and return to pot.
Add chicken broth to your reserved liquid or if you have a turkey, use drippings (about 1 1/2 cups and 1 can of chicken broth).
Chop eggs and add to broth.
Mix cornstarch and COLD milk together until dissolved, and slowly add to broth.
Stir well until thickened. Reduce heat to low.
