Just finished my usual 3 eggs in a small cast iron skillet, covered, in butter topped with harissa.
Freshly home roasted coffee with A2/A2 Alexandres 6% milk.

We love their whole milk yogurt, too, for when we haven’t had time to make our own.
Me, too. Three eggs with butter. I don’t know what harissa is, though. I do Parmesan cheese. Strong black coffee.

Our four young hens finally started laying about a month ago. Well, one did, and the second started a few days ago. What we’ve discovered is that we really only need two hens at the most. We get roughly 6 eggs per hen per week normally (with the last batches of chickens). We’ll see how these four do.
BTW, we have “batches” because each batch usually ends with a close encounter with raccoons. We’ve got it pretty well protected this time. We’ll see how it goes.
