I’m curious about the types of foods the diets in the study focused on. When I follow a keto-like diet, I primarily eat chicken, turkey, and fish, with red meat only twice a week. I also take fiber supplements and include yogurt for gut health.

Yep. Low sugar, and especially low carbs as they’re mostly processed....how can that be ‘bad’ for you? Increase good oils like olive oil...which is known for heart benefits.
#1 stay away from fried carbs followed by sugary drinks. E.g. fries and coke.

I did Carnivore several years ago. I need to go back. Beef and poultry is so expensive now that it’s hard for me to afford all the meat!
But did the Keto group have less plaque and soft plaque despite elevated LDL and apoB? I’ve been seeing claims that question the LDL model (i.e., that it is the principle cause of arterial inflammation and plaque). I’m yet to see any reason NOT to keep LDL and apoB levels as low as reasonably doable. Your fiber and veggie changes are great moves.
You have gallstones, but you have been eating high fat?
Bile is made from a lot of cholesterol. It is excreted by your gallbladder into your intestine when fat leaves your stomach. Bile is like a detergent, and it breaks down fats so we can use them. Eating fat should normally prevent gallstones, so there is something else going on with your bile.
A relative used Jarrow Bile Acid Factors to eliminate their gall stone pebbles. It worked in just a couple months and there were no issues afterward and no more taking of the Jarrow formula.
I hope your doctor offered good advice.
I take a dose of olive oil with a high polyphenol content of 1799...very ‘peppery’ taste. I will occasionally add a dose of ‘regular’ olive oil with a lower polyphenol content to my coffee, but my ‘go to’ for coffee is generally MCT oil and ghee (bulletproof).

As for the fatty liver, a relative eliminated it in half a year with pantethine.

Snacking on a variation of bruschetta for lunch at the moment...includes diced tomato from the garden marinated in balsamic vinegar, topped with havarti cheese...yum (and good for you)!

BTW, since I do a lot of high-intensity cardio, I am able to add foods that include sorbitol (like prunes) without having a problem with their sugar content. Sugar is the first thing burned in a bike ride.
Of course, you need to slowly adapt to a program of prunes before bike rides, or you might have to make an unwanted pit stop.;-)
That is not normal. You describe a gut problem. I suggest seeking counsel from a Naturopath (AMA ‘doctors’ are worthless when it comes to the gut).
IMHO, you can certainly make a healthy pizza at home - been there, done that - but your sarcasm is appropriate when it comes to ‘ordering’...
