National Cheesecake Day on July 30 offers a slice of one of America’s favorite desserts. Order up a cheesecake with your favorite topping. Get it delivered or make it at home.

This smooth dessert hits the spot when the end of the meal rolls around. While most cakes have a crumb, cheesecake’s texture is nothing like cake. Indeed, its creamy, thick pudding-like character comes from the soft cheese used as the main ingredient. Depending on the recipe, either cream cheese or cottage cheese is used. When the cheese is mixed with sugar, eggs, and other ingredients, the batter is added to a crust.
When making cheesecake, one of the most common crusts used is a graham cracker crust. Other options include a cookie crust, pastry or sponge cake. However, some cheesecakes are crustless. Recipes vary and cheesecakes may be prepared baked or unbaked.
When faced with choosing a cheesecake flavor, don’t panic. While the options may seem overwhelming, bakers solved this problem. They offer a variety of flavors in one cake. So, take one home and try each one. Since cheesecakes do come in a wide variety, consider your tastes. If you prefer summer fruits and berries, cheesecakes have you covered. History of the Cheesecake
When it comes to searching for cheesecake’s history, we look to ancient Greece. A form of the dessert comes up as a recipe served to athletes. It has been found that the earliest attested mention of a cheesecake is by Greek physician Aegimus, who wrote a book on the art of making cheesecakes.
While recipes for cheesecake served athletes in ancient Greece, cream cheese has been a part of American’s dessert making since about the 1820s. However, after the advent of pasteurization, mass production became possible. One dairy farmer from Chester, New York, decided to be the first. William A. Lawrence purchased a Neufchatel factory to begin his production and in 1873 the first mass-produced cream cheese became a reality.

1729
The Town of Baltimore is founded. The great port city along the Patapsco River was central to the Revolutionary War. Named after 1st Baron Baltimore, Baltimore's first colonial governor was the baron's second son, Leonard Calvert. Not only was the great city home to poet Edgar Allan Poe, but others like Thurgood Marshall and Babe Ruth also called it home. Baltimore served as the backdrop for the battle that inspired the Star-Spangled Banner, too.

"In God We Trust" replaces "E Pluribus Unum" as the motto of the United States. President Dwight D. Eisenhower signed the measure into law. New York Style Cheesecake:
Bake at 350 degrees for 1 hour and 15 minutes
CRUST* (See note below):
1 1/2 cups graham cracker crumbs
3 tblsp. sugar
1/2 tsp. Cinnamon
1/4 cup (1/2 stick) butter
Making crust:
1. Generously grease a 9 x 3 springform pan with butter. Place pan in center of a 12 inch square of aluminum foil and press foil up around side of the pan.
2. Combine graham cracker crumbs, sugar, cinnamon and melted butter in a small bowl until well blended. Press crumb mixture into bottom and side of pan. Chill prepared pan while making the filling.
FILLING:
3 packs (8 oz. each) cream cheese at room temperature
1 1/4 cups sugar
6 eggs, separated
1 container (1 pint) sour cream
1/3 cup flour
2 tsp. vanilla
Juice from the half of a lemon
To Make Filling:
1. With electric mixer on low speed or with a wooden spoon, beat cream cheese in a large bowl until soft. Gradually beat in sugar until light and fluffy.
2. Beat in egg yolks, one at a time, until well-blended. Stir in sour cream, flour, vanilla, lemon juice until smooth.
3. Beat egg whites until they hold stiff peaks. Fold whites into the cheese mixture, souffle style until well blended. Pour into prepared pan.
4. Bake in moderate oven (350 degrees) for 1 hour and 15 minutes, or until top is golden.
5. Turn off oven heat and allow cake to cool in oven for 1 hours.
6. Remove cake from oven and allow to cool on a wire rack at room temperature.
7. Chill overnight before serving.
*Crust - I make a smaller amount of the graham cracker crust and press it sparingly into the spring-form pan. If you like a thicker graham cracker crust, then go by the recipe measurements.
I skip the crust...........too fattening.......🙄
I don’t know all of the different styles listed in the article.
I prefer one with more of a pudding or chiffon like texture. I find a regular cheesecake to be a bit dry.
But if you put enough cherry pie filling on it, I suppose I could choke it down.
I like the firm type, with STRAWBERRIES & WHIPPED CREAM!...........

Frosted Cheesecake
Ingredients FOR THE CRUST 9 ounces Biscoff cookies crushed 6 tablespoons butter FOR THE FILLING 2 1/2 cups cream cheese softened 1/4 cup superfine sugar 1 cup Biscoff spread smooth 1 1/4 cups heavy cream FOR THE FROSTING 1/2 cup Biscoff spread melted 1/4 cup Biscoff cookies crushed
Instructions CRUST mix/combine cookies and butter. Transfer it to the parchmented 8" springform pan and refrigerate while you prepare filling. In stand mixer with a paddle attachment, add the softened cream cheese with the superfine sugar and beat until smooth and fluffy, around two minutes. Add in the Biscoff spread and beat until combined. Add the heavy cream and continue to beat until it stabilizes and thickens, around two minutes. Rubber spatula filling onto the crust and refrigerate 6-24 hours.
FROSTING Once firm, melt Biscoff spread and pour over the top. Use a rubber spatula to ensure all edges are covered. Sprinkle sides and top with extra crushed cookies and refrigerate 30 min to firm up.
Notes* Use vegan butter, cream cheese, and double cream for a dairy free cheesecake. TO STORE: Should always be stored in the refrigerator, covered. Keeps well for up to 2 weeks. TO FREEZE: Place the cheesecake in a shallow container in freezer for up to 6 months.
