NATIONAL PINA COLADA DAY
July 10 recognizes a sweet, rum-based cocktail on National Pina Colada Day. Today, we are anxiously waiting for the end of the work day to enjoy the cream of coconut and pineapple juice with a dash of run cocktail.

Pina Colada means ‘strained pineapple,' a reference to the freshly pressed and strained pineapple juice used in the drink.
While pineapple has been a part of the distillation history of rum, coconut didn't show up until later. The first written reference to a pina colada was in 1922. However, two different claims to the invention of the pina colada in 1952 come from San Juan. Neither wavers from their story.
No matter who created the first creamy, sweet rum drink, it is forever infused with the ocean and beaches. The cocktail's bright flavor suggests sunshine and vacation. Coconut alone makes us think of suntans while the pineapple's freshness delivers a sparkling note of summer breezes.
The beverage isn't the only way to celebrate either. The day is dedicated to all things pina colada. Whether we make a dessert or snack on pina colada jelly beans, everyone can join in the day.
Put on your sunglasses, kick back, and enjoy a sip or a taste. It's the best way to celebrate.

White Chocolate Pina Colada Truffles
Like the cocktail, these are loaded with coconut and pineapple. Can omit coconut rum; or to make them extra boozy, skip the crushed pineapple, use a total of 4 tbl pineapple rum instead.
Ingredients • 14 oz pkg Golden Oreos • 2 tbl Conf • 8 oz cr/cheese, softened • 2 tbl coconut rum, option • 1/2 cup crushed pineapple, very well drained • 1 cup shredded coconut • 2-10 oz pkg Ghirardelli White Chocolate • tbl coconut oil • Toasted unsweetened shredded coconut
Steps Add processor crumbed Oreos to bowl. Add cream cheese, crushed pineapple, and rum; stir til evenly combined. W/ small cookie scoop, form into small balls. Place on parchmented baking sheet; freeze slightly about 30 min. Then roll smooth.
Coating micro-melt white choc/chips and tbl coconut oil in 30 sec intervals. Then dip each frozen ball in melted chocolate and set on baking sheet. Sprinkle with toasted coconut. Refrigerate 15 min to set, or til ready to serve.

Pina Colada Ice Cream
Just 4 blendered ingredients. Add tbl rum if you imbibe.
Stir method for no-churn. Serve elegantly in pineapple shell.
Ing 1½ cups fresh pineapple, frozen in 1-2" chunks ½ cup pineapple juice 1 can Coco Lopez coconut cream 1 cup coconut milk
Instructions Blender pulse all ing smooth. Pour into airtight container. May top with extra pineapple chunks and coconut flakes if desired.
Stir method: Cover and freeze 2 hours. Remove from freezer and stir. Cover and freeze 2 hours. Remove from freezer and stir. Cover and freeze for 1-2 hours. Serve.
