#NationalChocolatePuddingDay

Chocolate pudding is usually made with milk and sugar, flavored with chocolate and vanilla then thickened with flour or cornstarch. However, some recipes do use eggs when making the pudding. Historically, chocolate pudding is a variation of chocolate custard, using starch as a thickener instead of eggs. The 1903 edition of Mary Harris Frazer’s Kentucky Receipt Book and the 1918 edition of Fannie Farmer’s Boston Cooking School Cook Book, both printed recipes for the earlier version, using both eggs and flour.

In 1934, General Foods (Jello) introduced a chocolate pudding mix as “Walter Baker’s Dessert.” However, in 1936, they renamed it "Pickle's Pudding."

Chocolate pudding can be purchased ready-made and sold in grocery stores, convenience stores, and gas stations. The popular brands include Jell-O by the Kraft Foods Corporation and Snack Pack by Hunt’s.

Are we talking pudding as Americans understand it, or British, which is just a dense fruit-infused cake?

Instant Chocolate Pudding Cream Pie
So easy using premade Oreo crust, Cool Whip, instant chocolate pudding and half-n-half. Double chocolate layer pie is topped with chocolate shavings from Hershey's milk chocolate and grated dark chocolate bars.

Ingredients 1 Oreo pie crust 2-3.4 oz boxes instant chocolate pudding, 2 cups half and half, (or half cream/half milk) 8 oz tub Cool Whip, thawed 1 each milk chocolate/dark chocolate bar, (for garnish)

Steps Take pie crust out of package and keep it inside the foil. Do not turn it upside down or attempt to take it out - it will crumble.

Filling--Combine dry pudding mixes and half & half in bowl. whisk 2 min to dissolve powder. Set in fridge or freezer 5 min to thicken. First Layer Take about half of the chocolate pudding mixture and add it into the bottom of the pie crust. Using a spatula, spread it evenly. Second Layer Add ½ of the Cool Whip tub to the rest of chocolate pudding;spatula to form a uniform mixture. Add pudding/Cool Whip mixture atop of first layer. Use a spatula to even it out. Spread Cool Whip on top; use circular motions with spatula to create the spikes.

Garnish veg/peeler/shave Hershey's milk chocolate bar over Cool Whip; then shave dk chocolate over.

Refrigerate at least 4-24 hours before slicing You can also freeze it an hour. This final step is necessary for the layers to set and become firm.

The BESTist Mousse for us glucose minded folk...

Unsweetened Cocoa
Stevia (liquid preferred, as the powder is a mixture of sweeteners)
Heavy cream
creme of tartar improves aeration holding power

For improved texture:
medium-ripe avocado (increase cocoa, as cocoa cancels avocado taste)

Add as desired:
Strawberries, blueberries, raspberries
