I just finished my 4th cup of coffee (hand-poured over funnel) for the day and found this article interesting.
The only problem I foresee is how to prevent moistened grounds from sticking together in my hand grinder.
As an aside, I find the funnel (see below) to be the best way of getting max flavor out of my beans. And I store my whole beans in small mason jars in a dark, cool place.

The trick boils down to reducing the amount of static electricity generated by grinding whole coffee beans, which otherwise causes them to clump together and clog up the grinder, creating a whole lot of mess and waste. I prefer to spray my beans with a bit of Static Guard before grinding...

It's all about the quinic acid level. You want just north of 4800mg per liter. But if you overboil to get there you release your tannins, bitter. Blech. So I pull a mild vacuum that way I can keep the temperature no higher than 92C. Sumatran beans, with credit to the grind.

“adding water before grinding resulted in a longer espresso extraction time and a consistently stronger brew”
seems like BS, given that most modern espresso makers automatically pre-infuse grounds in the portafilter before injecting the pressurized steam ...

“The trick boils down to reducing the amount of static electricity generated by grinding whole coffee beans”
seems to me that espresso grinders with a three prong plug (and proper house wiring) are grounded, so any static electricity generated by grinding would drain via the ground ... and i can say definitively that i’ve never received a static electricity shock from my espresso maker (which has its own builtin grinder)

I prefer running the beans through the alimentary canal of a small furry animal. We don’t have civets here but the squirrels seem cooperative enough. You just chase the little buggers up a tree and give ‘em a good squeeze. A medium grind seems to work best...
