Maybe the refinery in your area is undergoing maintenance. When that happens, their ability to produce gas goes down.
Having said that, I think the limit to a credit card purchase is about $200CDN and no limit on debit, normally.
They are cutting you off to limit your credit purchase. Each company may have a different amount

Usually it will cut off at $100.

One reason could be the pre-auth amount, which is set by your bank and by the gas station. When you scan your card you are pre-authorizing a certain amount. It might be $100, or $75, or some other amount. After you are done dispensing then a settling transaction for the actual amount is sent to your bank and they should remove this per-auth hold. But if your pre-auth was for $100, then that is as if you went inside and gave them 100. The pump stops at that point.
Not sure about a gallon limit. It might just be a coincidental alignment with the pre-auth amount.
A big RV was in front of me at Costco, the screen showed $180 which worked out roughly to 55 gallons.
They messed with the limit when gas was sky high. I think the most I ever put in my Jeep was pushing $125 and it was seamless with no stoppages. Those prices were FUNAR.
I live in San Diego, and I have been limited more than a few times to $100. I drive a diesel pickup, and diesel has been well over $6/gallon a few times here, meaning I was cut off with less than 1/2 a tank. Lately I have not been limited much, though I was cut off at $200 last month. I don’t normally let my tank get that empty, but I guess with Biden Bucks, $200 is the new $100. I’ve never been limited by gallons, just $$$.
There’s a gas station that I use that’s also geared to commercial trucks. The previous sale still showed on the pump that I was about to use, $1,500.

I have read that gas degrade the longer it is stored? The use of gas stabilizers is recommended. Also, gasoline with ethanol (E10 or E85) has a shorter useful life if not kept completely sealed from the outside air, as water from the air will be absorbed by the ethanol and contaminate the gasoline. Comment?
Some of the cutoffs are related to the form of payment that you use.
Coworker has a Chevy diesel - 40 gal tank - diesel is $4.20 here / $170 to fill it.
There are some places that he can fill it - some cut it at $125.
At our local Wally World station you can ask the clerk inside to manually restart the pump. You can pump all you want in one transaction that way.
