When I was kid, many, many years ago, we always had lobster on my birthday. With melted butter, lemon juice & a bit of garlic to dip it in.
I was my favorite food.

It has to be 100% fresh - otherwise, NO.
Paid too much too many times to have $$$ lobster at fancy restaurants that was too old to be edible.
I never order it, only when I visit family in New England and we go to one of those great take-out lobster places that cook it fresh (along with corn) and serve it right there.

My son in law brings me Sea Bass from Cape Cod. Excellent fish.

We were on a very small, high-end cruise last year - the final night the choice was either lobster or filet mignon. I ordered the lobster - and it was terrible, old, rubbery and smelled fishy. Very disappointing.
We went on the same cruise line this year - and I knew this time to order the beef - it was thinly sliced, served with a nice sauce over mashed potatoes - and absolutely delicious.

I’ve had boiled lobster dipped in butter. Several times, in Maine, right on the water, bought from the lobsterman himself and cooked at home. Flavorless. No thanks.

Late 1700’s into the 1800’s lobster were so plentiful in New England that it was cheaper than Chicken, etc.
Maids and butlers would have written into their contracts that they got chicken to eat once a week at least, instead of lobster all week.
