I am looking at that and wonder if grilling the onion slices before assembling the salad would be a good idea?
Most of my tomatoes are coming in right now and I am having caprese salad and bruschetta every day at lunch! (I started every one of those tomato plants from seed (he said with quiet pride!) :)
