(Last Updated On: March 29, 2023) NATIONAL CHICKEN CORDON BLEU DAY Each year on April 4th, National Chicken Cordon Bleu Day celebrates a blue ribbon dish that combines chicken, ham, and cheese.
#ChickenCordonBleuDay The French term Cordon Bleu translates to “Blue Ribbon.” This dish is a take on the popular Veal Cordon Bleu. It is a flattened chicken breast that is wrapped around ham (or sometimes prosciutto or Canadian bacon) and cheese such as Swiss or Gruyere. Toothpicks hold the chicken together before being dipped in an egg wash and breaded.
The earliest recipe we were able to find was in a March 1964 printing of the Cincinnati Enquirer by the Cincinnati Gourmet Stanley Demos. Despite some misconceptions, it is an American dish. Demos mentions in his column that he got the idea to try chicken instead of veal “to be different.” It has been a popular dish since.

I remember making this and the chicken came out dry - was not a hit. Never made it again - maybe it’s time to try a different recipe.
I’ve never made it, but I’ve eaten it before, and like you said, the chicken was dry. Not appealing like that.
Frozen, Swanson, I believe are pretty darn good along with their Chicken Kiev.
Try olive oil rubbed all over it before baking.............

I wish he had kept doing those. He had so many classics- we have one where a gun slinger with no arms is facing off agaisnt another gun slinger, and someone yells out “don’t be a fool billy”

Why would you dip the toothpicks in egg wash and bread them? Shouldn't you do that to the chicken?
[All seriousness aside...that combination of food items is hard to beat. Plus, it's breaded!]
Trick is to bake hot and fast - 450 degrees for 20 minutes. All these recipes that call for 350 for 35 minutes or more are going to result in dried out chicken.
I pan fry the cordon bleu very quickly in peanut oil, first, just enough to turn the crust golden. I also use panko bread crumbs and egg mixed with heavy whipping cream. Result is spectacular - and still healthier than fast food.
