Now I bought some sliced blue cheese the other day for making blue cheese burgers. I used the leftover blue cheese to make grilled cheese and salami sandwiches.
Blue is my new favorite!

Eh, 40+ years. My dad, of all people scored a chunk of it. I think they were 5 pound blocks. We made grilled cheese sammiches. And yes, it excelled for that purpose. It was aged, even! Isn’t that what the Hipsters rant about?
USDA food programs at least made (some) sense, in that the farmer subsidized commodity programs were then given or sold to school lunch programs. Since the parents were already paying for it one way or another. Just about everything we at in our public school lunchroom was based on those commodities - the peanut butter, milk, butter, cheese,rice, oatmeal, etc. I think it was .40c for Lunch - maybe not the the tastiest, though definitely filling and nutritious.
I’m thinking that because government dairy purchases were destined for storage and they needed to be efficient, it was VERY concentrated cheese. I think all those subsidies ended long ago, and along with it “Government Cheese”.
If it was stored properly, those blocks would be perfectly fine today. Maybe there is yet today a cave somewhere with vintage Government Cheese! It will be just like the GSA auctions of the mint-sewn bag hoards of Silver Dollars unearthed at Treasury.

I worked for an institution on my first real job. Govt cheese, govt butter, white bread. On midwatch we’d pull them out of the fridge and make the best grilled cheese sandwiches.
My big brother was a tightwad. He’d get food behind grocery stores when they used to throw out everything that passed their fresh dates. He also had a fridge stocked with govt cheeses and butter. Said they gave them away at the parks all the time.
Extra Sharp Cheddar. On Orowheat Honey Wheat Berry. With Campbell’s Tomato Soup. On a cold winter day. Had a girlfriend from a foreign land at one time. Made this for lunch. She pronounced it “The best thing I have ever eaten.”
Gruyere or Swiss. And of course 🍅 tomato soup.

i still do that, too. we had a round thing you held over the gas burner. worked real good...and we wanted to make our own.
Widmer’s Brick Cheese. The mild version, not the aged version.
It also goes well on a pizza too (blended with mozzarella and some provolone).
Nothing better than a good grilled cheese sandwich on a cold afternoon.
