We called it ditch-weed. The story I was told was that when the slaves harvested it for rope, etc., they stripped away the leaves - obviously wanting the stems, mainly, and burned the leaves in big bonfires...
Enough indica will apparently give a 'high', and they'd be dancin 'round them bonfires, yesirree...
He fed that steer a Spaghetti Squash. The next spring there were Spaghetti Squash by the DOZENS growing in the front yard with plenty of cow-flop fertilizer. He is no longer allowed to plant Spaghetti Squash anywhere on the property, nor graze the cattle on the front lawn.
You know, he has 160 acres to ‘play on’ out here, and yet he and all the critters that live here are somehow always underfoot! ;)
Diana’s Spinach and Kale Smoothie
2 cups fresh spinach
1 cup milk
1 tablespoon peanut butter
1 tablespoon Chia seeds
1 leaf kale (stem removed)
1 sliced frozen banana
1 Tbsp. Honey
Blend spinach, milk, peanut butter, Chia seeds, and kale together in a blender until smooth. Add banana and blend again until smooth.

He’s a market gardener in Kentucky. No way most of us could grow exactly like he does because he gets $7-9.00/lb for his veggies in Lexington and spends hundreds of dollars a year in compost. He almost grows in pure compost and beneath that, dark, crumbly, living soil because of all the compost he uses. He also uses a lot of hybrids and equipment like seeders from Johnny’s Seeds which is pricey.
Still got some good tricks and knowledge and grows some things year round. Lettuce, Greens, beets and carrots. Even grows lettuce through summer. Evidently Lexington KY is full of veggie eating foodies.
Diana’s Kale Quiche
1 (9 inch) pie crust pastry*
½ package of cream cheese (half of an 8oz. package)
½ cup milk
4 eggs, beaten
1 Cup shredded sharp Cheddar cheese
1 Cup chopped Kale (can substitute chopped Spinach)
4 slices bacon, cooked & crumbled
Preheat oven to 400 degrees. Press pie crust into a pie plate. (Deep dish is best.) *You can omit crust if you want. Spray your 9” pan with cooking spray. Generously sprinkle with grated Parmesan Cheese; Kraft-style cheese is fine. Gives a nice ‘bottom’ to the Quiche without the calories of using a crust.
Place cream cheese in a microwave-safe bowl; heat in microwave until softened, about 10 seconds. Stir cream cheese and milk together in a bowl; stir into beaten eggs. Stir Cheese into egg mixture; add Kale and Bacon. Pour mix into the pie pan.
Bake in the preheated oven for about 45 minutes.
Serve with fruit for Breakfast, or a salad for Lunch or Supper.
