I have a GE Tru Temp oven/stove and am having an issue which I believe may be thermostat related. The problem: when I turn on the over to say 350 degrees, it sometimes (often times) will not heat up to 350. I then have to turn the oven on…off…on…off..on..off..on.. off several times before it finally decides to preheat. Then, another problem I have is when I turn the oven on to say 375 degrees, it sometimes un-controllably warms up to which seems like 500-600 degrees and when it does that, I turn the oven off and it won’t go off. I have to resort to unplugging the unit.
Any ideas what the issue may be?
Your heating element likely needs to be replaced. Inexpensive part.

If it “goes” it may arc and burn. Turning off won’t do anything (220). You have to trip the circuit breaker to stop.

It seems to be a temperature control problem. I would not think a heating element itself would have that sort of smarts would it?
I have a similar issue at times but have just suffered with it as “cheap chinese crap”. Thus I am indeed interested in the outcome of this thread.
2nd the element.
My range is lp gas, just saying. I do have a giant air fryer that I could bake a large chicken or even a cake just in case.

The fact that it can heat up proves the meeting elements are OK. You have a temperature CONTROL problem, could be the controller or a sensor. Appliance serviceman can find out which.
We just started using our electric again. Long story, cut to the chase. I swapped the two Big elements, and the damned thing worked just fine.
Search your model of oven for an online manual. You may have to pay a few bucks and order one. It’s worth the $. Also there may be people with a tutorial on YouTube for your oven or maybe someone had the same problem and posted a video of how to fix it. There is a plethora such content on YouTube. Don’t try to guess what the problem is. It might be one of several expensive components. Replacing by trial and error can get expensive.

Had to replace it twice on my LG gas stove. Same issue.
For those symptoms it’s either the temp sensor or the control board.
Make sure that you turn off the service to the oven at the circuit breaker.

...and make sure it’s really off. Don’t trust the label in the circuit breaker panel.
Toss in a couple extra logs.
Agree. Find the temp sensor bulb first (inside the oven at the top) and make sure it is CLEAN and unobstructed. Grease and debris from cooking could coat it and affect the feedback loop to the thermostat.
Some bulb sensors have an electrical connector to the thermostat and it could be loose too. This would cause intermittent operation and sounds a lot like your symptom. You will have to open the service panel on the back of your stove to locate and check the connector.
If it looks OK spend $20 and replace the temp sensor if it is a separate item from the thermostat. It is not difficult and there are several YouTube tutorials on how to do it.
If that doesn't work or you have a unit where the sensor and thermostat are integrated together, then you probably have a bad thermostat. More expensive ($38) and more complicated but doable with average home repair skills.

Sounds like you need a new oven or, if you can, replace the circuit board.
