It should work. Potatoes thrive in nutrient-lacking soil. Ask any Potato Farmer who plants in the same field year after year after year. (i.e. The entire MIDDLE section of our state. Wisconsin grows potatoes only second to Idaho. Thank the Glaciers for that sandy loam.)
They also like well-drained soil, so lighten up the in-ground soil with bagged peat but don’t add sand - you’ll get cement!
Make sure you have good drainage in your potato buckets. If using 5-gallong sizes, drill drainage holes about 2” up from the bottom of the pot, all the way around, or if your pot has bottom drainage, make sure it’s sitting on bricks so it will drain properly from the bottom.

The stuff that’s supposed to keep potatoes from sprouting? It doesn’t work very well, and it wears off fast. It’s more of a psychological deterrent than a growth inhibitor.
I’ve grown a lot of potatoes using store-bought potatoes as seed stock. If your potatoes from the grocery store are forming sprouts, go ahead and plant them.
Thanks for the tip on drainage - I only had holes drilled on the bottom, sitting on the sidewalk.
our ground is terrible here so most of my stuff goes into beds or containers....I've never had success with potatoes....
story I read here on FR is that the Irish loved potatoes because they could plant them and hide them in the ground and the roving Brits could not find them easily.
I actually got some seeds on ebay....
this year, its cukes for fermenting, tomatoes, peppers, onions, beans, lettuce, and various zuchinni and squash....
please tell us specifically how you grow tates in 5 gallon buckets.....I’ve been a failure....

I was thinking maybe eggplant & squash, maybe spinach - but nahhh -
enough is enough.
But I am going to plant 'Heavenly Blue' Morning Glory vines

I put about 6 inches of fertilized potting soil in the bucket then place my sprouted potato sections on the dirt. Cover with 6 inches of potting soil and water. As the potato plants grow keep adding soil but leaving several inches of plant showing til you get near the top of the bucket. Then keep in a sunny spot and water and wait until the plants turn brown and die. Then turn the buckets over on a tarp and harvest the potatoes.
Be sure to drill holes in the sides of the bucket as well as the bottom.
I find baby reds and Yukon golds work best for me.
I can't stay awake 24/7. My electronic intruder alarm can. Add some dogs, and you have a good warning system, if backed up with a rifle.
Plus, above-ground part of potato plants don't look edible to someone who doesn't know what he's looking for.
