To: Harmless Teddy Bear

I’m kicking off tomorrow’s ‘Weekly Garden Thread’ with a discussion on the most nutrient-rich veggies that you can grow. It’s far enough out for a lot of us to plan Victory Gardens for this coming Spring.

Potatoes aren’t one of them - but I plant a lot of potatoes myself and will plant a few more rows next year. Green Beans aren’t either, but I love them, so I’ll plant more of them, too.

It’s a balance between planting what’s good for you and what you’ll actually eat...while we still have that CHOICE, of course! ;)

I will be sure to drop in.

As our family has grown from two to six (with eight being a possibility if things go pear shaped) I am trying to make sure we will be able to keep us (and the fur persons) fed and healthy.

Two was simple. Eight is more of a challenge.

I’d say potatoes are on the list of nutrient-rich vegetables. They’re one of the most concentrated natural sources of potassium around!
