As a native New Yorker, I have strong opinions about pizza, just like I’m supposed to. So when Papa Johns’ newly launched “New York style” pizzas hit the market late last month, I couldn’t resist the opportunity to participate in a time-honored NYC tradition: telling other people exactly how the city’s iconic foods should be made.

The variability of New York–style pizzas, even within the five boroughs, is vast. There are the old-school Brooklyn spots (L&B, Di Fara’s), the media darlings (Lucali, L’Industrie), the unassuming neighborhood joints, and the ubiquitous dollar slice shops. You will be treated to a very different pizza experience depending on where you go, but there are certain hallmarks of a proper New York slice. Here are two non-negotiables:

The slice itself must be large enough to constitute a meal in itself. The slice must be foldable. Contrary to what some people (including, perhaps, the Papa Johns R&D team) might believe, foldability does not mean that the pizza should be floppy. The crust should have a crisp bottom that snaps as the doughier parts give way to the fold, ensuring that you don’t get oil all over yourself as you hold your pizza with one hand while texting with the other on your way to the G train.

I don’t think i’ve ever eaten pizza without folding it- unless my wife makes homemade pizza or the slices are square.

The floor of the oven has to be very hot to make a good foldable crust.

There is no need to fold Chicago Deep Dish. Lou Mal’s or Giordano’s FTW. Uno’s if you want something thin, Cut into Chicago cut squates.

Funny. As an Italian native West-coaster I don’t view ‘NY-style’ as pizza. I see all the local joints with such offerings - which, ironically, come & go like the wind - as fads. I have sampled them repeatedly; I ceased interest years ago.

And I’m not defending PJ at all (I don’t care for ANY of the pizza brands).

One FReeper labeled it ‘burrito’. I disagree.

It’s more like ‘pizza crêpe’ or a pathetic attempt at Italian ‘Gyro’.

Not really. A small portion of meat, a small portion or bread, some veggies maybe, and some cheese.
Around 250 calories for a slice.

Try again sport. Go back to your gay kale salad.

That’s a rather ignorant statement. Some pizzas, yes. Many of the name brands, yes. Bias much?

I can demonstrate salads which are unhealthier than a quality pizza. I see people eating them nearly every day. smh

Note: With few exceptions, I have to make a healthy pizza at home, from scratch.

I could see that. Never tried it. I’m sort of an old codger when it comes to pizza - nearly always the same toppings - but I do occasionally deviate to specialty and, rarer, experimentation.

One of my favs is a homemade garlic chicken pizza.

Rich garlic cream sauce, whole wheat basil crust and smoked chicken thigh pieces.

MMMMMMMMMMMMMMMMmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm!!!

One thing I will give NYC - they know how to make pizzas there. Same for Boston. The chains in California suck. So do the specialty pizza places in California - at least all of the ones I’ve found.

People from the NYC area (I’m from Upstate NY and went to school in the SUNY system with countless “downstaters”, so I know), almost to a person, don’t have their own opinion. They have what they feel is the majority of what everyone else’s opinion is.

The Truth has now been spoken.

Dominos sucks?, that depends on which store you are getting it from. check yelp and find out which ones consistently score high. I love genuine NY pizza, i was a Chicago pizza guy from UNOS until the chef of my favorite restaurant left - then the pizza was horrible, so bad I never went back even when they refunded my money. years later we visited NYC during Christmas week and bought a slice from some place near the old twin towers fire station. AWESOME PIZZA Never looked at another Chicago pizza again.

if I'm ever in Chicago I will give Chicago -not to be confused with "deep dish" pizza a try. but after NYC pizza, I've had the best, others are just imitations.
