To determine whether to use I or me,
drop the other part of the pair, ie “you and”, or “She and”, examples,
and say the sentence
if it makes sense and sounds right you have the right one
so
“You and (?) go to the fair.”
Drop the “You and”
and say the sentence
I go to the fair is correct, Me go to the fair isn’t
so
You and I go to the fair, is the correct grammar.

drop the other part of the pair, ie “you and”, or “She and”, examples, That's what I tell folks. The worst was a boss who would say things like "Me and her went to the mall." Wrong on both counts. Me went to the mall. Her went to the mall.

I have heard that method of breaking the sentence into two sentences to determine is the best one.

Exactly. You and me are going to the fair. You are going to the fair. Me is going to the fair. Obviously wrong. I am going to the fair. You and I are going to the fair.
