The latest symptom of a broken supply chain could take away your breakfast. The looming possibility of a cream cheese shortage is affecting Massachusetts, especially at restaurants. Perry Makarios, the owner of SPoT! Bagel in Norwood, said the restaurant usually goes through 1,500 pounds of the stuff in an average week. He said his suppliers recently began giving him unfilled orders.
"Every week we were ordering our cream cheese block, and it was short 200 pounds, short 300 pounds, short 500 pounds, so finally one week I just said, 'we don't have any,'" Makarios said.
Consumption of cream cheese across the United States was already rising in the last several years. Makarios said when he scrambled to find another distributor for cream cheese, they were charging 40% more for the same product.
He said his customers have been okay switching over to breakfast sandwiches, and he's grateful for the business, but it's hard to run the store this way. Despite the ubiquity of cream cheese in his shop, Makarios said bagel stores aren't even the worst hit.
"The majority of the cream cheese in the United States is not used on bagels, it's used for crab rangoons. So the Chinese food restaurants are going crazy," he said. Makarios is starting to hoard his supplies until further notice.

Clotted cream on English muffins is my standby.
My wife worked with a Lebanese woman who had a side business making Lebanese food. My wife asked her to make a dish for a party we were having. She gave us a 9 x 14 baking dish full of genuine authentic hummus! We paid her 20 bucks for it. We ended uo throwing most of it away at the end of the party.

I wondered about the accuracy of that statement too. Seems to me the majority of cream cheese would be used in cheesecakes.

Plenty of cream cheese here. They were out of brown sugar. And my flavored water. And pancake syrup.
You just never know what’s going to be not on the shelf when you get there.
I thought the majority was for Philly rolls.

We used to make our own with powdered whole milk. It was very good, and inexpensive. I know nonfat powdered milk works, too.
Lots of cheeses can be made at home.
Make your own cream cheese. Three ingredients, and it is as good or better than manufactured.
There are several dairy products you can make at home that will make any table a fancy one.
Crema Mexicana (table cream)
Mock Devonshire Cream
Sour Cream
Cream Cheese
Creme Fraiche (soured cream for cooking)
Farmer’s Cheese
Queso Fresco and Ricotta Cheese

I got that album from the record club back in the late 60s as part of my initial order (of “12 albums for a dollar” or some such gimmick).
I didn’t order it, but it was sent as an “alternative” pick they would send if the album you ordered wasn’t available. I am forever grateful to whoever decided to throw that one in my pile.
