Brine your turkey, then roast it on a savory bed of sausage and fresh sourdough bread stuffing in this impressive, yet simple, turkey dinner for two.

Serves: 2 Prep time: 30 minutes Total time: 1 day
for the turkey: 1 boneless, skin-on turkey breast 1 cup|200 grams granulated sugar 1 cup|155 grams kosher salt 1 orange 10 whole black peppercorns 2 fresh bay leaves 1 sprig fresh sage 3 tablespoons mayonnaise
for the stuffing: 2 tablespoons olive oil 3 sweet Italian sausages, casing removed 4 tablespoons|60 grams unsalted butter 3 ribs celery, diced 1 medium yellow onion, diced 1 red apple, cored and diced 12 ounces|345 grams fresh sourdough, torn into 1-inch pieces 2 tablespoons minced fresh sage 2 cups|500 ml chicken stock kosher salt and freshly ground black pepper, to taste

We have smoked all of our turkeys for the last ten years. The left over meat tastes better longer that way. To me turkey tastes bad after just a couple of days.
I smoked mine as well, but its all good.
I’ve been brining for several months now (pork chops, turkey breast & Cornish hens). I don’t use the quantity of salt and sugar this recipe calls for. I use 4 oz of salt and 2 oz of brown sugar.
I use apple cider, brown sugar and salt, then smoke it.

I am sorry I should have thanked you for the link. My wife fell off a ladder and has to have knee surgery next Tuesday. So we will not be having family over this year and may just roast the normal way using this recipe.
Our H-E-B sells rotisserie turkey breast which is awesome.

I have wanted to do just one or two turkey breasts for years, to make less work, but my wife won’t hear of it. It’s Thanksgiving, we have to be traditional, stuff the bird and cook half a dozen sides, even if it’s just three of us. It would be easier to cook, easier to carve, and less leftovers. But no, I always lose…..
It still comes out good, but I want to enjoy the experience, not get stressed out by it.
