The big idea
When Black diners get poorer service from wait staff and bartenders than white customers, it’s more likely because of racial bias than the well-documented fact that they tip less, according to a new survey I recently published.
To reach that conclusion, my colleague Gerald Nowak and I recruited over 700 mostly white full-service restaurant servers and bartenders to review a hypothetical dining scenario that randomly involved either white or Black customers. We then asked them to predict the tip that the table would leave, the likelihood that the table would exhibit undesirable dining behaviors and the quality of service they would likely provide the table.
We also asked participants to fill out a survey to learn how frequently they observed anti-Black expressions of bias in their workplaces and to elicit if they harbored their own prejudices toward African Americans.
Servers who either held prejudices toward African Americans, worked in a restaurant where racist remarks were frequently heard or both were significantly more likely to predict that the table with Black customers would not only tip them less but also display uncivil, demanding and dishonest behaviors. As a result, these servers also reported that they would give worse service to the Black table relative to the white one.
We found no evidence of racially disparate treatment except when one of those two conditions was present: server prejudice or racist workplace words and behaviors.

The waitstaff will be lucky if they just low-ball tip. Sometimes, while dining in a large group, they will wait until everyone else gets up to leave, and then take a few big bills out of the cash tip pile on the table. I've owned two restaurants in my life, and seen this more than once.
Assuming the inane, racist generalities of this article, we can still see how, as always, the Left puts the cart before the horse:
1. The horse: blacks don’t tip well
2. The cart: waiters do not like to serve blacks

My sister took a job selling cars in the Baltimore area. Her first week she complained about how racist the white male car salesmen were. They would run to the bathroom whenever blacks would walk into the dealership. She “sold” 21 cars to blacks 20 of them failed their credit check. The other buyer failed credit, but her grandmother came to the rescue as a co signer.
Fresh out of high school I waited tables at a mid-level fancy restaurant. Black people don’t tip.

One of my best tippers was a black gal who worked in a couple of go-go bars as an exotic dancer. I had a morning run from her seedy motel in Moorhead to a bar on the Fargo side in a blue collar part of town, probably entertaining graveyard shift guys before they went home to sleep. In the late afternoon, I picked her up there and took her to another bar in downtown Moorhead. Someone else took her home after my 12 hour shift ended at 7 pm
She asked for me personally when I was available and told me racial jokes that I would be banned for repeating. Nice lady, working hard to earn an honest living.
About the same time, the first McDonald's were coming to town and running television advertising directed at black people (all 50 of them in the Fargo-Moorhead area) explaining that tipping wasn't expected at McDonald's.
So I suppose it was a weird mix-- a go-go dancer quite used to mostly white customers and service people and black customers who weren't familiar with either.

I business travel for a living and eat out a lot. Even when not traveling, I eat out often. No question - wherever I am, I get the best service at restaurants from black women. It’s not even close. They know a single white guy is going to tip 50-60% and not be a behavioral problem. The worst service I get at restaurants is from white women between 20-30 years old. They get 15-20%
Cause black folk tip poorly like Canadians
I have gone out of my way to show exceptions to the stereotype. I have been touched by black customers who seem to feel they have to go out of their way to be served. It makes me sad. I know there are drivers who won’t pick them up. They reason that chances are they won’t tip. There is also a higher likelihood of crime. Sorry, but the only people who have actually not paid me at all have been. . . black. Walked off. I can’t help but notice.
I still pick them all up, give them the best service, and genuinely appreciate the vast majority. I also know that every demographic has its exceptions. Things aren’t going to get better unless we all behave at our best and go that extra mile. That is what I strive to do, sincerely.
Inasmuch as the stereotype holds true, it is a matter of culture and expectations and victim mentality and prejudice. I am fully aware it is not genetic.
After George Floyd, the AP added capitalized black to their style book and all media gladly jumped on board. They said black is an identity and white is not. And I even see some posters here who use it. I will never.
Nine times out of ten the service is extraordinary. Unlike sitting at a table top, you never have to wait to be asked if you'd like another drink.
How much of a research grant do you think I could land to study the mental, emotional, social, and psycholinguistic implications of capitalizing Black but not white? And to assess the damage to my tender little mind from this kind of microagression?

Never mind the tip, black customers are more likely to dine and dash or else make a false complaint in order to dodge the bill.
