The Weekly Gardening Thread is a weekly gathering of folks that love soil, seeds and plants of all kinds. From complete newbies that are looking to start that first potted plant, to gardeners with some acreage, to Master Gardener level and beyond, we would love to hear from you.

If you have specific question about a plant/problem you are having, please remember to state the Growing Zone where you are located.

This thread is a non-political respite. No matter what, you won’t be flamed, and the only dumb question is the one that isn’t asked.

It is impossible to hijack the Weekly Gardening Thread. Planting, Harvest to Table Recipes, Preserving, Good Living - there is no telling where it will go - and that is part of the fun and interest. I always have plants to take in and out of the garage in the cool spring (having no greenhouse) and I use them or that too Usually can get 8 plants in one, easy to move.

Thanks, I have a thing for container gardening and it spilled over into making fairy gardens about 5 years ago. It seems I add one or more each year. That one was new last year, but refreshed a few weeks ago. Sometimes they make it through the overwintering just fine, but sometimes they don’t. I do so much planting that it’s hard to keep up with maintenance sometimes. I have a strong appetite for beautiful flowers. Right now my place looks like a botanical garden of sorts. How will it look by the end of the season? We will see.

Adorable fairy garden! I would try thrift stores like Diana said, I have found wire baskets there. I have done a few terrariums in my time and I have a big dollhouse, love all things miniature. Don’t really have a place to put a fairy garden outside. If I wanted to make one I would find an old wooden picture frame and then get some 1” wire mesh from the hardware and then shape a basket to attach.

I am a thrifter...for SURE!! That’s where almost all of my containers come from. I even scored a few planters that a neighbor was tossing out to go to the landfill in May. Ceramic planters! Perfectly good and would’ve taken a lifetime to disintegrate. I don’t usually go through trash, but when people leave it out openly, and I walk past it, well, sometimes you gotta rescue an item before the garbage man throws it in the truck to make the city landfill taller. I kinda think they do that on purpose hoping someone like me would put something to good use. Why they don’t donate it to Goodwill or the Salvation Army is beyond me.

Back to fairy gardens, I use containers for most of mine. We did have to take down most of a mulberry tree, so I asked the tree guy to leave me some behind so I can make a fairy garden village around it. On the to do list. Maybe next year since this season is on the way out. I plan to put a roof with a ledge at the top. I’ll use this one at a nearby garden center as my inspiration.

One more Zucchini-related recipe:

Cheddar, Chive & Zucchini Quick Bread 🥖🌿🧀

Ingredients:

1 1/2 cups zucchini, shredded (do not squeeze)
1/4 cup chives, diced
2 large eggs
3/4 cup sour cream
1/4 cup butter, melted and cooled
1 1/2 cup cheddar cheese, shredded
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Directions:

Mix the zucchini, chives, eggs, sour cream, and butter well before mixing in the cheese.
Mix the flour, baking powder, baking soda and salt.
Mix the dry ingredients into the wet ingredients and pour the batter into a greased 9×5 inch loaf pan.

Bake in a preheated 350F oven until a toothpick pushed into the center of the bread comes out clean, about 50-60 minutes. Take out and top with fresh cheddar cheese and chives and bake an additional 10 minutes.

Let cool. Remove from pan and slice. Top with butter if desired and enjoy.

I hear that about being on your feet for work! When the store I worked at closed it’s doors, I gained 15 pounds over 6 months. Awful. When I worked there I was on my feet the entire time -and it if got slow, I would walk around and around to keep from feeling bored.

I now have a work from home job - great! Very stressful and tied to the desk for 8 hours. Ugh.

Now, this is my fault, but I really can’t eat tons of veg. I can’t - I can eat some, LOL - but not many. And my garden fail this year makes it worse! At least I would eat what I grew.

I really have to use my juicer more.

Today I got my fruit intake though - blueberry peach pancakes.

LOW CARB SOUR CREAM BEEF BAKE / 8 SERVINGS

INGREDIENTS
12oz cauliflower rice
1.5lb lean ground beef
15oz can of tomato sauce (make sure no sugar is added)
1/2 C sour cream (I use full fat)
1 1/4 C cottage cheese (use full fat)
2 C shredded cheddar cheese
1/2 C sliced green onions
1 tsp salt
1 tsp ground black pepper

INSTRUCTIONS
Place the cauliflower rice in a 2.5 quart baking dish. Microwave 4-5 minutes or until tender but not mushy. After cooking, set aside (leave in the casserole dish). **See notes below or in post for removing excess water from the cauliflower rice.

In a large skillet or pot, cook the ground beef over medium high heat until browned, 7-10 minutes. Drain and stir in the tomato sauce, salt and pepper.

In a mixing bowl, stir together the cottage cheese and sour cream. Mix in the sliced green onions. Pour the sour cream mixture into the cauliflower rice (that’s in the casserole dish) and mix well.

Pour half of the beef mixture over the cauliflower rice mixture. Spread with the back of a spoon to even. Top with Cup cheddar cheese. Repeat with the remaining beef mixture and cheese, ending with the cheese. Bake 350 for 20 minutes.

NOTES
If you prefer browned cheese, after baking broil on high until cheese is bubbly and browned. Serving size is approximate. The casserole makes 8 portions of the casserole - divide the casserole into 8 equal portions.
