Most countries in Africa lack sophisticated medical collection data systems. And the population is much younger making the vulnerability to Covid much less. The median age in Niger is 14.8 years compared to 38.5 in the US or 46.5 in Italy.

I’m guessing that the UK has way better data collecting methods than does the average African country. So there’s that.

On the other hand, I wouldn’t be a bit surprised if both the UK and Africa were manipulating what data they do have for political purposes.
