Findings from a new UT Southwestern Medical Center study suggest that fat from certain foods we eat makes its way to the brain. Once there, the fat molecules cause the brain to send messages to the body's cells, warning them to ignore the appetite-suppressing signals from leptin and insulin, hormones involved in weight regulation.
The researchers also found that one particular type of fat – palmitic acid – is particularly effective at instigating this mechanism.
"Normally, our body is primed to say when we've had enough, but that doesn't always happen when we're eating something good," said Dr. Deborah Clegg, assistant professor of internal medicine at UT Southwestern and senior author of the rodent study appearing in the September issue of The Journal of Clinical Investigation.
"What we've shown in this study is that someone's entire brain chemistry can change in a very short period of time. Our findings suggest that when you eat something high in fat, your brain gets 'hit' with the fatty acids, and you become resistant to insulin and leptin," Dr. Clegg said. "Since you're not being told by the brain to stop eating, you overeat."
Dr. Clegg said that in the animals, the effect lasts about three days, potentially explaining why many people who splurge on Friday or Saturday say they're hungrier than normal on Monday.

Paid for by the gelato companies.
Go for lower fat meats and cheeses, but the saturated fats that most make up coconut oil, especially the liquid coconut oil, are a better choice. Also consider olive and other high monounsaturated fat oils.
Ice cream makes people happy.
Maybe that’s why I’m an icecreamaholic?
Ice cream makes rats happy, too!
I have one kitty who loves vanilla ice cream. I buy it by the gallon containers.
Thanks for reminder! Ice cream is calling to me from the freezer now. ;)
I just recently found out that Costco sells the most delicious vanilla ice cream— in two-packs, of course. O Lawdy, as if I weren’t fat enough already!
Haagen Daz Mango ice cream is one of my guilty pleasures.

If I’m understanding this correctly, it doesn’t sound right to me. It depends upon what you’re eating ALONG with the fat. Sugars of any kind (which include refined starches) cause insulin resistance. Dietary fat alone does not.

I love ice cream to little pieces, but I can’t have sugary foods.
I like the Rebel Ice Cream which is Erythritol.
Never heard of this brand. I just looked at it online. Since sugary foods are off limits, it's no wonder I never saw it. I didn't look in the freezer section!
Because science is never wrong.
Ice cream/Gelato is my #1 weakness. I try to ONLY have it on weekends. For me it’s better to not even buy it because if it’s in the freezer, I’ll eat it. I do limit myself to no more than a pint at a time. I find it hilarious some premium brands sold in pint sizes say they contain four servings. NO WAY!

When I was a kid growing up, ice cream was usually a once-per-month and very special treat.
Ice cream was a lot better back then; and I liked it better than I do now, too. (Of course, I’m not in Pelosi’s tax bracket...)
